We offer a small, well prepared selection of gastropub quality food that we feel our team can take pride in preparing and serving, and would like chefs with a great attitude to teamworking, and good attention to detail to join our team.
OUR AIM: We are looking to build a slick team to staff our unique cinematic experience in the heart of Belfast; we provide table service to our patrons from our fully licensed bar and well equipped kitchen with baristas preparing coffee, cocktail bar staff preparing drinks, and gastropub quality dishes prepared by professional chefs.
We are looking to build a team of mature, responsible and reliable chefs with a great attitude to teamworking in good spirits.
Taking personal pride in good attention to detail is vital for us, this is billed as a luxury experience and the food must assert this.
Within the kitchen we are building a quality culture of clear and calm communication, where everybody strives to do their best and be the best colleague for those around them, this is vital to us, we don't want a kitchen full of anger and hostility, no dreading being around colleagues here, and we welcome those who can bring their experience, yet are open to upskilling, and happy to impart experience and guidance to help the team and lift developing colleagues as needed.
We are looking to grow and develop the kitchen team and develop for a busy summer of huge film releases, and we will also be redeveloping the menu, and elevating our offerings over the course of the year, so it's an exciting time to join us.
DUTIES:
Our Sous Chef(s) will work alongside the Head Chef to successfully oversee the daily running of our busy kitchen operations where they will contribute to menu development, management of the chef team, all aspects of food ordering, preparation and storage and daily oversight of all health & safety/food hygiene practices.
They will work closely with the onsite management team to forward plan, control rotas, costs, training, stores and any other factors required to ensure ongoing 5* EHO scores.
They will have an integral role in helping to create a fun, professional and safe place to work whilst delivering high standard of quality and presentation of all dishes.
Key Responsibilities:
- The preparation and cooking of our Avenue dishes to the highest quality and in line with the recipe guidance set out by the Head Chef
- Assist in the completion of all HACCP paperwork, checklists and food management in line with EHO and company guidelines.
- To follow good practice with all matters relating to Health & Safety on the premises and pass this along to the whole team.
- To assist with the people management and training of the chef team and KP's, including one to one coaching and reporting back to the Head Chef.
- Monitoring and following good management of portion control and waste. This will assist with the overall profitability of our kitchen and help the team achieve targets.
- To assist the Head Chef with the development of any new menus and dishes.
- To help maintain the cleanliness and organisation of all kitchen and related store areas.
- To set or follow shift pre-opening plans for placement and duties of staff, observing shift timings and breaks etc in line with company procedures.
- To protect all company assets, whether stock, equipment or service items, and to instill this mentality across the whole of the kitchen team.
- Any other tasks and/or duties as directed by Head Chef/management.
Essential Criteria:
- Minimum of 1 year experience in the role of Sous Chef or higher.
- 2-3 years’ experience working in a busy and structured commercial kitchen.
- NVQ Level 2
- Level 1 & 2 Food Safety Certification
- Strong understanding of all COSHH and HACCP regulations.
- Desire to work as part of a team to deliver industry leading standards.
- Ability to work in a fast-paced environment whilst maintaining a focus on delivering high standards.
- Fully flexible to work days, evenings and weekend shifts.
