We are looking for a Kitchen Assistant for our traditional Japanese kitchen.
It’s okay if you don’t have any kitchen experience, as long as you have passion.

Duties include:
- Wok section
- Sushi section
- Pans, fryer, and larder
- Ordering and stock control
- Ensuring adherence to food safety and health and safety standards in the kitchen
- Maintaining cleanliness of work areas
Prior experience with Japanese cuisine is not necessary. Full training will be given, and this position is a great opportunity for someone with an interest in, or passion for, traditional yet modern Japanese cuisine. Our Head Chef has over 10 years of experience and is committed to authentic Japanese cuisine.
If you have a can-do attitude and some kitchen experience, we can take care of the rest.
- 2–3 days per week. More hours may be available if needed.

“Sushi.” was established in 2005 and has been a bastion of traditional Japanese food in the Brighton community since its opening, with an excellent reputation for the quality of our food and service. As we enter the 2026 season, we are looking to build a strong team to take the restaurant forward.
You must be eligible to work in the UK and able to start immediately.
