Salary: £45,000 per year + additional tips
Lokal is a newly opened Turkish restaurant in the heart of Fitzrovia, London, from the group behind Fred Bakery and Faros restaurants.
With new projects in the pipeline and further openings planned, this is an exciting time to join our growing group. We’re looking for an experienced, passionate and hands-on Bar Manager to take ownership of the bar operation at Lokal and grow with the business.
The Role
As Bar Manager, you’ll be responsible for the smooth and successful running of the bar, overseeing service, people, stock and standards. You’ll work closely with the General Manager and wider restaurant team to create a drinks programme that complements Lokal’s Turkish-inspired food and delivers an outstanding guest experience.
You’ll be a confident and inspiring leader who is equally comfortable managing the operation and getting behind the bar during busy services. You’ll set the standards for the team and help establish Lokal as one of Fitzrovia’s go-to destinations.
As the group continues to grow, there will also be opportunities to progress into future projects and take on greater responsibility across the group.
Key Responsibilities
Take full responsibility for the day-to-day operation of the bar.
Lead, manage and motivate the bar team, creating a positive and professional working environment.
Deliver consistently high standards of drinks quality, presentation and service.
Develop and maintain an exciting cocktail, wine, beer and spirits offering.
Work with the management team to develop drinks inspired by Turkish flavours, ingredients and culture.
Train and develop bartenders, ensuring strong product knowledge and service standards.
Manage rotas, staffing levels and day-to-day team performance.
Oversee stock ordering, deliveries, storage and stock control.
Monitor beverage costs, GP, wastage and margins.
Maintain accurate stock and operational records.
Ensure the bar is clean, organised and fully compliant with health, safety and licensing requirements.
Work closely with the kitchen and restaurant teams to ensure a seamless overall guest experience.
Stay up to date with current drinks trends, products and techniques, bringing new ideas to Lokal.
Take responsibility for opening and closing procedures.
Lead by example during service, ensuring warm, knowledgeable and genuine hospitality at all times.
What We’re Looking For
Proven experience as a Bar Manager, Assistant Bar Manager, Head Bartender or similar senior role.
Strong knowledge of cocktails, spirits, wine and beer.
Previous experience managing and developing a bar team.
A genuine passion for hospitality and delivering exceptional guest experiences.
Excellent leadership, communication and organisational skills.
Commercial awareness, with a good understanding of stock control, beverage costs, GP and wastage.
A hands-on approach and the ability to lead confidently during busy services.
Someone who is proactive, positive and takes ownership.
Creativity and enthusiasm for developing drinks and new ideas.
The ability to build strong relationships with both guests and team members.
Previous experience within a high-quality London restaurant or bar is a must.
