The Role:
1176 Restaurant is seeking an experienced and passionate Head Chef to lead our kitchen team within the historic grounds of Cardigan Castle. This is a unique opportunity to help rebuild the restaurant under new ownership. We thrive to have a creative menu that uses local produce including vegetables grown in our on-site garden.
Head Chef Role:
As a head chef, you will have full responsibility for kitchen operations. This includes menu creation, food quality, kitchen leadership, stock control and maintaining the highest standards of food safety and hygiene. We are looking for someone to lead by example, inspiring the team and set the culinary direction of the restaurant’s vision. The restaurant will be operating on a breakfast, lunch and dinner service.
Key Responsibilities:
- Design and deliver seasonal menus with a strong focus on high quality and local produce
- Work closely with the on-site garden team to plan and utilize seasonal vegetables
- Manage and lead the kitchen team, including training & mentoring
- Maintain high standards of food quality, consistency and presentation
- Oversee stock ordering, supplier relationships and cost control
- Ensure compliance with all food safety, hygiene and health & safety regulations
- Collaborate with front of house and management to deliver an exceptional guest experience
What we are looking for:
- Proven experience as a Head Chef or strong Senior Sous Chef
- Passion for seasonal cooking and working with fresh and locally sourced ingredients
- Strong leadership and organisational skills
- Ability to work calmly and efficiently in a busy service environment
- Have a creative approach to menu development with attention to detail
