The role
This is a daytime prep position. The core purpose is to drive the daily prep operation — ensuring the kitchen is fully stocked, organised, and ready for service. You will also assist with lunch set-up and support the early stages of service.
This is not a commis role. We need someone who can work independently, read a prep list, and deliver to a consistent standard every shift.
Key responsibilities
- Work through the daily prep list independently and efficiently
- Prepare stocks, sauces, marinades, and mise en place across all sections
- Butcher meat and break down fish to spec
- Set up for lunch service and support the early service period
- Communicate clearly with the Head Chef and CDP team on prep priorities
- Maintain organisation, cleanliness, and labelling standards
- Follow food safety and HACCP procedures at all times
- Assist with deliveries and stock rotation
What we're looking for
- CDP-level experience in a professional kitchen
- Strong independent working — able to manage a prep list without supervision
- Good knife skills and broad prep technique across meat, fish, and vegetables
- Reliable, organised, and consistent
- Familiarity with seasonal produce and Mediterranean flavours is a plus
- Right to work in the UK
