About the Role
Eaterysupply.com is looking for an experienced and highly responsible Night Wholesale Operations Manager to oversee our overnight wholesale meat production and delivery operation.
This role would suit someone with several years of professional butchery experience, an experienced kitchen or production supervisor, or a sous chef who is ready to progress into a senior operational management position.
The successful candidate must be comfortable managing a busy night operation, leading a team, making important decisions, and taking full responsibility for ensuring customer orders are prepared and delivered correctly and on time.
Key ResponsibilitiesNight Operations Management
- Take full responsibility for the smooth running of the night operation.
- Plan and supervise all overnight production, packing, order preparation, and dispatch activities.
- Ensure all customer orders are completed accurately and within the required deadlines.
- Resolve operational problems quickly and professionally.
Delivery and Route Management
- Organise and manage daily delivery routes.
- Coordinate drivers, vehicles, loading times, and delivery schedules.
- Ensure orders are loaded correctly and dispatched on time.
- Monitor delivery performance and respond to delays or route issues.
- Ensure customer delivery requirements are clearly communicated to drivers.
Butcher and Staff Management
- Lead, supervise, and support butchers, production staff, packers, and drivers.
- Allocate daily duties and monitor staff performance.
- Ensure employees follow company procedures and maintain high standards.
- Manage staff attendance, punctuality, productivity, and conduct.
- Provide training and guidance where required.
- Report staffing issues to senior management.
Stock Management
- Monitor meat, packaging, grocery, and operational stock levels.
- Ensure stock is correctly received, stored, rotated, and recorded.
- Carry out regular stock checks and report shortages or discrepancies.
- Reduce unnecessary waste, overproduction, and stock loss.
- Ensure the correct products are allocated to wholesale customer orders.
Health, Safety and Food Hygiene
- Take responsibility for health and safety during night operations.
- Ensure all staff follow food hygiene, cleaning, temperature-control, and safe-working procedures.
- Monitor chilled and frozen storage temperatures.
- Ensure production areas, equipment, vehicles, and storage areas are kept clean and compliant.
- Complete and maintain the required operational and food-safety records.
- Report accidents, equipment faults, food-safety concerns, and operational risks immediately.
Customer and Client Expectations
- Ensure wholesale orders meet the customer’s specifications, quality standards, weights, cuts, and delivery deadlines.
- Respond professionally to urgent customer requirements or order changes.
- Investigate operational issues that may affect customers.
- Work closely with the sales and customer-service teams to prevent recurring problems.
Reporting and Senior Management Liaison
- Provide clear shift reports to senior management.
- Report production totals, incomplete orders, stock shortages, staffing issues, delivery problems, waste, and customer concerns.
- Attend management meetings when required.
- Recommend improvements to productivity, staffing, delivery routes, stock control, and service quality.
- Act as the main point of contact for senior management during night operations.
Site Inspections
- Complete regular inspections of production, packing, storage, loading, and staff areas.
- Check that machinery and equipment are being used safely.
- Ensure opening and closing procedures are completed correctly.
- Identify and report maintenance, hygiene, security, or compliance issues.
Candidate Requirements
The ideal candidate will have:
- Several years of professional butchery, meat production, wholesale food, kitchen, or catering experience.
- Previous experience supervising or managing employees.
- Strong knowledge of meat preparation, food hygiene, and safe handling procedures.
- Experience working as a senior butcher, production supervisor, kitchen manager, or sous chef would be highly suitable.
- The confidence to manage an entire night operation with limited supervision.
- Strong organisational, leadership, and problem-solving skills.
- The ability to work under pressure and meet strict dispatch deadlines.
- Good written and verbal communication skills.
- Basic computer skills for reports, stock records, route planning, and operational communication.
- A responsible, reliable, and hands-on approach.
- Flexibility to work nights, weekends, and busy seasonal periods.
Experience within wholesale meat, food distribution, catering supply, or temperature-controlled deliveries would be highly advantageous.
