The Opportunity

The owner operates on a completely hands-off philosophy, meaning you will have full operational autonomy to run the venue, steer the team, and build a lasting culture.

Key Responsibilities
- Total Financial Control: Direct responsibility for the site P&L. You will execute weekly food, beverage, and accommodation stocktakes, analyse data, and hit industry-standard margins.
- Smart Scheduling: Create, manage, and optimise the FOH and housekeeping rotas to align with hotel occupancy and peak dining covers.
- Compliance Leadership: Oversee and audit all statutory health & safety, fire safety logs, food hygiene certifications, licensing laws, and right-to-work compliance.
- Guest Journey: Maintain impeccable service standards across the restaurant floor, the core rooms, and the lodge.
- Reporting: Deliver streamlined, clear weekly financial and operational updates directly to the owner.
What We Are Looking For
- A minimum of 3+ years of experience as a General Manager or strong Assistant/Restaurant Manager in a high-quality gastropub, boutique hotel, or destination restaurant.
- A candidate with sharp commercial acumen who understands food and beverage GP margins inside and out.
- An individual with a strong grasp of UK compliance frameworks (EHO, Fire, HR) who can manage an site audit flawlessly.
- A self-starter who does not need day-to-day management to maintain excellent standards
Pay: £45,000.00-£52,000.00 per year
