Opening in August 2026, The Lyon is an exciting new gastropub and late-night destination located in the heart of Edinburgh's George Street.
With exceptional food at its core, a premium drinks offering, live music and a vibrant atmosphere, The Lyon aims to become one of the city's most exciting hospitality venues. We are looking for hardworking and enthusiastic Part Time Bar Backs to join our opening team and support our busy bar operation.
As a Bar Back at The Lyon, you will play a key role in ensuring our bartenders have everything they need to deliver outstanding service. You will keep the bar stocked, clean and organised, helping the team maintain high standards during busy service. This role will predominantly be Friday and Saturday evenings, although additional shifts may be available depending on the needs of the business.
Key Responsibilities
- Keep the bar fully stocked with glassware, ice, garnishes, spirits, beers and soft drinks throughout service
- Collect and wash glassware, ensuring it is returned to the bar promptly
- Maintain a clean, organised and safe working environment behind the bar
- Assist with deliveries, stock rotation and replenishment of bar supplies
- Remove empty bottles, packaging and waste efficiently throughout service
- Support bartenders with setting up and closing down the bar each day
- Follow all licensing, health and safety and food hygiene procedures
- Work closely with the bar and floor teams to ensure smooth and efficient service
What We're Looking For
- Previous experience in a busy bar or hospitality environment is preferred but not essential
- A positive attitude and strong work ethic
- Ability to work efficiently in a fast paced environment
- Excellent organisational skills and attention to detail
- Reliable, punctual and able to work well as part of a team
- Willingness to learn and support the wider bar team wherever required
- Flexibility to predominantly work Friday and Saturday evenings, with additional shifts available depending on the needs of the business
- A genuine passion for hospitality and delivering exceptional guest experiences
