Söderberg is a Scandinavian bakery and coffee shop company with presence in both Edinburgh & London. We proudly make all of our own award winning bread, pastry and cakes in our East Dulwich Bakery while our café delivers exceptional Swedish breakfast and lunch. Our coffee is our own special blend roasted by Obadiah in Edinburgh.
The Role
We are seeking a skilled and creative chef to start immediately and lead the production of our cabinet food and brunch menu. This role is ideal for a chef with strong brunch experience, a passion for Scandinavian flavours, and experience in fast-paced café environments.
You will be responsible for developing, preparing, and presenting high-quality sweet and savoury items that reflect authentic Swedish influences while appealing to a contemporary café audience.
Key Responsibilities
Cabinet Food Production
- Prepare and present daily cabinet items including sandwiches, open rye bread sandwiches, and salads
- Work alongside the bakery to ensure stock levels of prep for other sites are produced
- Ensure visually appealing displays that drive sales
- Maintain consistent quality, portion control, and minimal waste
- Monitor stock levels and manage ordering for cabinet items
Brunch Menu Development & Execution
- Work with the management team to design and execute a bakery inspired seasonal brunch menu inspired by Swedish and Nordic cuisine
- Maintain high standards of plating and presentation
- Manage prep schedules to ensure smooth brunch service
- Adapt menus based on seasonal produce and customer feedback
Kitchen Operations
- Maintain food safety and hygiene standards in accordance with local regulations
- Oversee daily prep lists and workflow efficiency
- Support and train junior kitchen staff where required
- Contribute ideas for menu innovation and special events (e.g., Midsummer, Christmas, Bakery Masterclasses)
- Ensure cost control and contribute to margin targets
Skills & Experience
Essential:
- Proven experience as a chef in a bakery café or similar environment
- Experience managing cabinet-style service and high-volume brunch
- Solid understanding of food safety and kitchen organization
- Ability to work independently and manage time effectively
Desirable:
- Formal culinary qualification
- Experience with Scandinavian cuisine
- Creativity in menu development
- Leadership experience in a small kitchen team
