Position Overview
The Operations Manager is responsible for overseeing the daily operational activities within our Approved Game Handling Establishment (AGHE). This includes supervising aspects of the production lifecycle—from the intake of carcasses to the dispatch of venison products. The successful candidate will work with the team to ensure that all activities align with regulatory frameworks established by the Food Standards Agency (FSA).
We recognise that the wild venison industry involves seasonal peaks and unique operational challenges. To support our operational team, this position offers flexible working hours. While the Operations Manager must ensure coverage during critical production windows, they are expected to manage their schedule to maintain operational continuity.
Core Responsibilities
Operational Oversight and Supply Chain Support
The Operations Manager will supervise plant activities related to primary butchery, processing, and logistics. A key focus is on supporting the execution of production schedules to meet demand, particularly during peak deer seasons. They will assist in implementing operational efficiencies to reduce waste and improve yields. Furthermore, they will support relationships with external stakeholders, including estate managers, professional stalkers, and third-party logistics providers, as directed by senior management.
Regulatory Adherence and Food Safety Support
Maintaining our reputation for quality requires rigorous adherence to UK food hygiene legislation, specifically Retained EU Regulation 853/2004. The Operations Manager will work closely with Official Veterinarians (OVs) and Meat Hygiene Inspectors, ensuring compliance with their directives. They are responsible for supporting the implementation and continuous adherence to the plant’s HACCP-based food safety management system. This includes ensuring meticulous record-keeping, overseeing Animal By-Product (ABP) disposal, and verifying that all staff are trained in safety protocols.
Team Supervision and Operational Reporting
Beyond operational tasks, the role involves supervising and supporting a team of skilled butchers and support staff. The Operations Manager will contribute to maintaining a culture of operational excellence. From a financial perspective, they will assist in monitoring operational costs and contribute to efficiency improvements. Success in this role is measured through Key Performance Indicators (KPIs) related to labour efficiency and product yield.
