Breakfast Chef – Bakery & Brunch Kitchen

Role Overview
We are looking for a passionate and skilled Breakfast Chef to join the kitchen team at Moi Bakeshop.
This is a hands-on role responsible for preparing and delivering high-quality breakfast and brunch dishes while maintaining excellent food safety, consistency and kitchen standards. You will play a key role in ensuring every dish leaves the kitchen to the highest standard and every service runs smoothly and efficiently.
Working closely with the Head Chef and wider kitchen team, you will help maintain an organised, fast-paced kitchen environment while contributing to menu development and continuous improvement.

Key Responsibilities1. Food Preparation & Service
- Prepare and cook breakfast and brunch dishes to company recipes and specifications.
- Ensure all food is presented consistently and meets company quality standards.
- Deliver dishes efficiently while maintaining attention to detail during busy service periods.
- Monitor food quality throughout service and ensure consistency across every order.
- Assist with mise en place and daily kitchen preparation.
- Ensure all orders are prepared accurately and within service time targets.
2. Kitchen Operations
- Maintain an organised, clean and efficient workstation throughout the day.
- Complete opening, service and closing kitchen procedures.
- Ensure all ingredients are prepared and available before each service.
- Monitor stock levels throughout the shift and communicate shortages promptly.
- Rotate stock correctly using FIFO principles.
- Minimise food waste through effective preparation and portion control.
3. Food Quality & Menu Standards
- Follow recipes and portion specifications consistently.
- Ensure excellent presentation of every dish.
- Support the introduction of seasonal menus and new dishes.
- Contribute ideas for menu improvements and specials.
- Maintain consistency across all breakfast and brunch offerings.
4. Teamwork & Communication
- Work collaboratively with kitchen, bakery and front-of-house teams.
- Communicate effectively during service to ensure smooth operations.
- Support the training and development of junior kitchen staff where required.
- Maintain a positive, respectful and professional working environment.
5. Food Safety & Compliance
- Follow all Food Safety, HACCP and Health & Safety procedures.
- Maintain excellent hygiene standards at all times.
- Complete daily temperature records, cleaning schedules and food safety documentation.
- Ensure all food is labelled, stored and handled correctly.
- Use kitchen equipment safely and report maintenance issues promptly.
6. Stock & Kitchen Organisation
- Assist with deliveries and stock organisation.
- Ensure ingredients are stored correctly and rotated appropriately.
- Help maintain accurate stock levels.
- Support inventory counts when required.
- Keep storage areas clean, organised and compliant with food safety standards.
Key Skills & ExperienceEssential
- Minimum 1 year's experience as a Breakfast Chef, Line Chef or Chef de Partie in a café, brunch restaurant or hospitality environment.
- Strong knowledge of breakfast and brunch food preparation.
- Good understanding of Food Safety and Hygiene regulations.
- Ability to work efficiently under pressure in a fast-paced kitchen.
- Excellent organisational skills and attention to detail.
- Strong communication and teamwork skills.
Preferred
- Experience in a high-volume brunch or café kitchen.
- Level 2 Food Hygiene Certificate (or willingness to obtain one).
- Experience working with fresh ingredients and seasonal menus.
- Passion for quality food and hospitality.
