We are looking for an experienced and passionate Sous Chef to join the kitchen team at Swan, one of London’s most unique and vibrant hospitality venues.
Purpose:
· To assist the Head Chef with the management of the kitchen, whilst always leading by example.
· To maintain the quality of the product and ensure that all sections run to the expected standard.
· To understand the importance of ensuring that food quality for both guests and staff reaches excellent standards and beyond.
· To assist with the creation of a good working atmosphere to keep team morale high and increase productivity levels.
Key Accountabilities/working relationships:
· Direct reports: Kitchen Assistants – Runners/Commis/Demi Chef de Partie/Chef de Partie/Senior Chef de Partie/Junior Sous Chefs
· Responsible for creating key working partnerships with all other departments.
Key responsibilities:
· To deputise in the Head Chef’s absence and to take charge of the kitchen when directed to do so.
· To maintain a high team, focus by showing co-operation and support to colleagues in the pursuit of the department’s goals.
· Produce and deliver all food for the operation as required and on time, as instructed by the Head Chef.
· Take an active role in the development and improvement of menu items and specials.
· Oversee ordering of food and stock control in the absence of the Head Chef.
· Have full understanding of GP% for all services and dishes.
· Ensure that all food stocks are kept under optimum conditions and that First-In, First-Out is in operation.
· Ensure that all mise en place is up to standard and on time.
· Ensure that all dishes are prepared with the correct recipe and to the correct quantity.
· Maintain quality and quantity control in all aspects, from portion control to freshness of the product presented.
· Ensure that during service all dishes reaching the Pass comes in due time and correct portions so minimum waste occurs.
· Ensure that the kitchen is always kept clean and tidy.
· Ensure that the team receives the right training and optimum guidance and support.
· Ensure that any anticipated shortages are communicated promptly to the Head Chef and relevant Manager on Duty.
· Ensure a correct handover is completed so the team has full understanding of what needs to be done/prioritised.
· Ensure that all equipment is clean, in good working order, maintained and any maintenance issues are reported following the correct procedure.
· Ensure staff are appropriately dressed, look professional, are well always presented and wear the correct uniform
· No horseplay is allowed in the kitchen and all chefs must be treated fairly and with courtesy.
· To liaise with the Head Chef and HR department on employee relations matters.
· Enforce personal hygiene.
· Be familiar with relevant management processes and policies.
· Help with all paperwork duties and daily senior tasks in the kitchen, such as rota creation, the daily special HACCP record, ordering, mise en place, briefings, etc.
· To be familiar with Fourth and FnB systems.
· Ensure all house rules are always adhered to in your department.
· Assist during stock take days to ensure that all information is recorded accurately.
· Understand and comply with food hygiene regulations as well as HACCP.
· To follow Health and Safety Policies and Procedures in every aspect and to be COSSH trained.
· To be aware of and act in accordance with Fire Safety Procedures at all times.
· To ensure you arrive at your workstation on time.
· To complete training courses as required.
