Assistant Manager Montpeliers Bruntsfield | Edinburgh
A neighbourhood institution. A team that cares. A place to grow.
Positioned in the heart of Bruntsfield, Montpeliers has been a soulful cornerstone of the neighbourhood for over thirty years. We’ve grown alongside our community, evolving from a local gem into a reliable staple where everyone feels like a local.
At Montpeliers, we believe in the beauty of simplicity. Our kitchen is dedicated to honest food and familiar flavours, serving timeless classics with a contemporary edge. Our bar is at the heart of what we do, creating a welcoming space where guests can enjoy great drinks, good food and genuinely warm hospitality.
We’re now looking for an Assistant Manager to join our management team and help us take the business forward.
The Role
As Assistant Manager, you’ll play a key role in the day-to-day running of the business, working closely with the General Manager to deliver an exceptional experience for our guests and a great working environment for our team.
This is a hands-on role for someone who enjoys being on the floor, leading from the front and taking ownership. You’ll have responsibility across the operation and will be trusted to make decisions, drive performance and keep standards high.
Your responsibilities will include:
- Supporting the General Manager with the smooth day-to-day running of all areas of the business.
- Taking full responsibility for the operation when the General Manager is away.
- Owning specific KPIs and business targets, with responsibility for driving and delivering results.
- Working alongside the General Manager to identify opportunities, improve performance and keep Montpeliers competitive.
- Leading, coaching and developing the team in an approachable and supportive way.
- Helping team members build their skills and confidence, creating a culture where people want to learn and progress.
- Taking ownership of the entire operation while on shift — from staffing levels and speed of service to stock control and guest satisfaction.
- Maintaining consistently high standards across service, food, drinks and cleanliness.
- Being visible and hands-on during service, leading by example and supporting the team when things get busy.
- Building strong relationships with our regular guests and ensuring every customer receives the level of hospitality we’re known for.
- Supporting training, team communication and the ongoing development of our people.
- Looking for ways to improve the business rather than simply maintaining the status quo.
What We’re Looking For
We’re looking for someone who is ready to take the next step in their hospitality career — or an experienced Assistant Manager looking for a business where they can genuinely make an impact.
You’ll ideally have:
- Experience in a similar hospitality, bar or restaurant management role.
- A genuine passion for hospitality and creating great guest experiences.
- Natural leadership skills and the ability to bring a team with you.
- The confidence to take ownership and make decisions.
- A strong commercial understanding and an interest in KPIs and business performance.
- The ability to coach and develop people rather than simply manage them.
- High standards and a real eye for detail.
- Energy, resilience and the ability to stay calm when things get busy.
- Ambition to develop yourself and the business around you.
Most importantly, we’re looking for someone who cares — about the guests, the team, the standards and the success of the business.
What’s in it for you?
We want our managers to feel valued, rewarded and supported as they grow with us. As part of the Montpeliers team, you’ll benefit from:
- Competitive salary with a structured bonus opportunity of up to £5,000 per year, rewarding strong performance across sales, profitability, guest experience and key business KPIs.
- Monthly tronc, giving you an additional share of the service charge.
- Employee discount across all 5 of our venues, so you can enjoy great food and drinks across the group.
- Real opportunities for progression — we want to develop our people and support ambitious managers looking to progress their careers within our business.
- Ownership and autonomy — you’ll have the opportunity to take responsibility for key areas of the business, influence decisions and see the impact of your work.
- A supportive management team that values good communication, development and people who take pride in what they do.
- A genuine chance to make your mark on an established neighbourhood business and help shape its next chapter.
Your future with us
This role is about more than simply running shifts. We’re looking for someone who wants to develop their management skills, take on greater responsibility and build a long-term career in hospitality.
For the right person, the Assistant Manager role can be an important step towards Deputy General Manager and General Manager level, with the opportunity to grow your responsibilities as your experience and performance develop.
Why Montpeliers?
Montpeliers is more than just a place to work. We’re a well-established neighbourhood business with a loyal local following, a strong identity and a team that genuinely cares about what we do.
We want our managers to have a voice, take ownership and be part of shaping the future of the business. If you’re ambitious, enjoy working with people and want the opportunity to develop your management skills in a busy, independent hospitality environment, we’d love to hear from you.
If you’re ready for your next challenge, we’d love to meet you.
Pay: £32,000.00 per year
