Job Description – Care Home Head Chef

The Chef will be responsible for maintaining high standards in all areas within the kitchen and work closely with the team, training supervising and developing the team and ensure hygiene is followed. The Chef should be competent in all aspects of kitchen duties and be able to produce variety of menus for residents based on their dietary requirements, maintain stock levels, order supplies, working to a budget and completing monthly audits.
MAIN DUTIES AND RESPONSIBILITIES OF THE CHEF
- Develop recipes/menu in line with allocated food budget and determine how to present dishes.
- Prepare and cook foods according to the menu and serve meals chosen by the Service users and ensure a variety of menu is available to meet the dietary requirement of the Service users,
- Check the freshness of food and ingredients.
- Supervise and coordinate activities of cooks and other food preparation workers.
- Set up the kitchen with cooking utensils and equipment, like knives, pans and kitchen scales and ensure kitchen area and equipment are kept clean and ready to use at all times.
- Ensure that food/ingredients are dated correctly with labels and used in date order and stored correctly according to the manufacturer’s instructions and ECC Regulations.
- Maintain a hygienic and germ-free environment at all times.
- Ensure compliance with all health and safety regulations within the kitchen area.
- Audit and record temperatures of fridges, freezers and food in logbooks daily
- Check that the care units have sufficient condiments, cutlery, etc, to meet their needs.
- Discuss with the manager and senior staff any proposed changes to the menu. Implement changes once approved.
- Maintain a stock control system and liaise with chosen suppliers on ordering the required stock whilst maintaining the budget.
- Report immediately to the manager any misappropriation of food products, and be aware of, breaches of food safety laws.
- Liaise with the activities staff in relation to requirements for Birthdays, Christmas, and other special occasions.
- Assist the Care Manager and Care Workers in the resolution of any Service Users’ catering complaints.
- Be aware of risks to the Service Users from the kitchen equipment.
- Comply with company policy and procedure concerning infection control and prevention.
Requirements
· Experience in managing a busy kitchen environment.
· Ability to demonstrate an ability to work well under pressure, prioritise tasks, communicate effectively at all levels.
· Interest in working in a care environment.
· Flexibility
· Experience in using various kitchen equipment.
· Knowledge of culinary, baking and cooking techniques
· Knowledge of nutrition and allergens
· Excellent time management skills
· Ability to pay attention to details.
· Leadership skills
· Creativity to create dishes on brand with the restaurant.
