Ballathie House Hotel is looking for a talented and creative Pastry Chef to join our kitchen team.
Ballathie is a four-star Scottish country house hotel on the banks of the River Tay in Perthshire, with a strong reputation for food and a 2 AA Rosette restaurant.
We are looking for a pastry chef who is passionate about their craft and wants to produce high-quality, contemporary desserts and patisserie using the best seasonal Scottish ingredients.
The Role
Working as part of our kitchen brigade, you will take responsibility for the pastry section and contribute to the continued development of Ballathie's food offering.
Your responsibilities will include:
- Preparing and presenting high-quality desserts for our restaurant menus.
- Producing petits fours, breads, cakes, pastries and other items required by the kitchen.
- Developing attractive seasonal desserts in collaboration with the Head Chef.
- Producing afternoon tea pastries, cakes and scones to a consistently high standard.
- Preparing desserts and pastry for weddings, private dining, functions and special events.
- Making full use of seasonal Scottish produce, including fruit and ingredients grown or sourced locally.
- Contributing ideas for new dishes and seasonal menus.
- Ensuring excellent consistency, presentation and portion control.
- Maintaining the highest standards of food hygiene and kitchen cleanliness.
- Managing stock and minimising unnecessary food waste.
- Ensuring ingredients are correctly stored, labelled and rotated.
- Assisting with ordering and maintaining appropriate pastry stock levels.
- Working closely with the wider kitchen and Food & Beverage teams.
- Maintaining standards during busy services and large functions.
What We Are Looking For
We are interested in someone who combines strong classical pastry skills with creativity and modern presentation.
The successful candidate should have:
- Previous professional pastry experience within a quality hotel or restaurant.
- A genuine passion for desserts, patisserie and baking.
- Strong attention to detail and presentation.
- An understanding of flavour, texture and seasonality.
- The ability to work independently and take ownership of the pastry section.
- Excellent organisational and time-management skills.
- The ability to maintain consistently high standards during busy periods.
- A positive attitude and willingness to work as part of a professional kitchen team.
- Good knowledge of food hygiene and allergen procedures.
Experience within an AA Rosette, fine-dining or luxury hotel environment would be particularly advantageous.
The Opportunity
This is more than a production pastry position.
We want someone who can help us continue developing a distinctive pastry identity for Ballathie — from the desserts served in our restaurant to afternoon tea, weddings, celebrations and special events.
There will be opportunities to work with seasonal produce from our own developing kitchen garden, alongside high-quality Scottish ingredients, and to contribute ideas rather than simply reproduce an established selection of desserts.
