Dulse Leith is a proudly independent, 2 AA Rosette seafood shack celebrating the very best of Scotland’s coastline. We’re known for bold coastal flavours, sustainable sourcing, and refined yet relaxed dining. As we continue to grow, we’re looking for a passionate and creative Head Chef to lead our kitchen and help shape what comes next.
We cook over fire. We keep things simple. We let exceptional produce speak for itself. Back-to-basics, done properly, is at the heart of everything we do.
The Role
As Head Chef, you’ll lead a dedicated team in delivering confident, seafood-led dishes that reflect the seasons and the quality of Scotland’s coastal larder. You’ll champion open-fire cooking and bold, clean flavours while ensuring our 2 AA Rosette standards are not only maintained, but pushed forward.
Alongside menu development, you’ll oversee the day-to-day running of the kitchen — from ordering and cost control to food safety and team development. Just as importantly, you’ll create a positive, focused kitchen culture built on respect, creativity and continuous improvement.
About You
You’ll have strong experience at senior chef level within high-quality, award-winning kitchens and a genuine passion for seafood and sustainable sourcing. You believe that less is more and feel confident working with ingredient-led, back-to-basics cooking.
You’re a natural leader who communicates clearly, mentors your team and thrives in a fast-paced, quality-driven environment. You take pride in standards, but you also understand that great kitchens are built on teamwork and trust.
