Assistant General Manager About Us
Vine Bar is an independent wine bar in the heart of Bermondsey, known for its carefully selected wines, welcoming atmosphere, and strong programme of events.
We are looking for an experienced, motivated, and commercially minded Assistant General Manager to support the General Manager in delivering exceptional guest experiences and strong operational performance.
The Role
Working closely with the General Manager, you will help lead the team, maintain consistently high standards, and ensure the smooth day-to-day running of the venue.
You will be confident taking full responsibility for the site in the General Manager’s absence and will play a key role in driving service standards, team development, revenue growth, and guest satisfaction.
This is a full-time, hands-on hospitality role that includes evenings and weekends. The venue closes at 1:30am on Fridays and Saturdays, so applicants must be comfortable working late shifts.
Key ResponsibilitiesOperations
- Lead and manage daily service to a consistently high standard
- Ensure the venue is always clean, well maintained, and guest-ready
- Manage reservations through ResDiary and maximise covers
- Keep Dish Cult listings accurate and up to date
- Monitor and respond professionally to online reviews, supporting the venue in maintaining a minimum 4.7-star rating
- Ensure website information, opening hours, and venue details are accurate and up to date
- Take full responsibility for the venue in the General Manager’s absence
Financial and Commercial Performance
- Monitor labour costs and support efficient rota management
- Investigate gross profit discrepancies and report findings to the Operations team each week
- Support revenue growth through upselling, events, private hire, and excellent guest engagement
- Create, promote, and deliver wine masterclasses and other events
- Identify new commercial opportunities for the venue
Stock and Compliance
- Manage stock through STO, including regular stocktakes and discrepancy investigations
- Ensure all operational and compliance procedures are followed
- Maintain high standards of food safety, licensing, health and safety, and cleanliness
- Support the onboarding and training of new team members
Team Leadership
- Lead, motivate, and develop the team in line with company values
- Support rota planning and scheduling through Planday
- Assist with recruitment, induction, and ongoing training
- Create a positive, professional, and supportive working environment
- Provide clear feedback and help team members develop their skills
About You
You will have:
- A minimum WSET Level 2 qualification
- Previous experience as an Assistant General Manager in a quality bar, restaurant, or hospitality venue
- Strong knowledge of wine and premium beverages
- The confidence to run a busy service and manage the venue independently
- Excellent organisational and communication skills
- Strong attention to detail and a proactive approach
- Experience using ResDiary or a similar reservation system
- Events or private-hire experience, preferably within hospitality
- A Level 2 Food Hygiene certificate, preferred
- Availability to work evenings, weekends, and late shifts, including Fridays and Saturdays when the venue closes at 1:30am

Pay: £14.00-£21.00 per hour
