Junior Sous Chef / Sous Chef – £38,000 – Fresh Italian Kitchen – Chelsea
Il Bistrotto is a small Italian restaurant in Chelsea, serving fresh Italian and Ligurian food with a focus on handmade prep, focaccia, pasta, fish, meat and simple food cooked properly.
We are looking for a reliable Junior Sous Chef / Sous Chef to join our kitchen team.
This is a hands-on role in a small kitchen, working directly with the Head Chef. Applications are reviewed directly by the Head Chef — no agency, no HR recruitment process.
This is a good opportunity for someone who wants real responsibility, proper training, and the chance to be involved in the daily running of a growing kitchen. The Head Chef has experience in Michelin-starred restaurants, but Michelin background is not required. What matters most is attitude, reliability, organisation, cleanliness and consistency.
You will support the Head Chef with daily prep, service, ordering, stock control, recipes, kitchen standards, cleaning organisation and team training.
You must be comfortable running sections, supporting the team during service, and taking charge when needed.

What we need:
- Previous experience as Sous Chef, Junior Sous Chef or strong Chef de Partie ready to step up
- Strong prep and service skills
- Good organisation and attention to detail
- Clean, reliable and consistent
- Able to lead by example in a small team
- Calm under pressure
- Good understanding of stock, wastage and kitchen standards
- Positive attitude and willingness to work closely with the Head Chef
- Basic English required
- Right to work in the UK
Experience with Italian food is useful, but attitude, organisation and consistency are more important.
This role would suit a chef who wants more than just a job: someone who wants responsibility, structure, and the chance to help build a strong kitchen.
