About Victoria Square Hotel:
Victoria Square Hotel is a ten-bedroom boutique hotel in the heart of Stirling, with The Orangery Restaurant as our 40-cover food and beverage offering for breakfast, coffee, lunch, afternoon tea, dinner and drinks.
We are at the start of an exciting new chapter. Our ambition is to develop Victoria Square into a relaxed Scottish 5-star boutique hotel, known for warm hospitality, high standards, thoughtful service and a strong sense of place.
The hotel has a small, personal feel, which means the General Manager role is hands-on, visible and central to the guest experience. This is a brilliant opportunity for someone who wants to take ownership of a growing business, lead a team, and help shape the future of a boutique hotel and restaurant.
The Role:
We are looking for a hands-on General Manager to lead the day-to-day operation of Victoria Square Hotel and The Orangery.
This role would suit an experienced Restaurant Manager, Food and Beverage Manager or hospitality leader who is ready to take the next step in their career into full site management.
The successful candidate will be responsible for leading the team, managing daily operations, running service in The Orangery with the support of the Front of House team, and driving the overall success of the hotel.
This is not an office-based General Manager role. You will be expected to be present with guests and team members, particularly during key service periods such as lunch, afternoon tea and dinner.
You will have responsibility across the full business, including Front of House, The Orangery, housekeeping, kitchen coordination, maintenance follow-up, guest experience, team culture and commercial performance.
Key Responsibilities:
As General Manager, you will:
- Lead the day-to-day operation of Victoria Square Hotel and The Orangery.
- Be actively present on the floor and lead lunch, afternoon tea and dinner services with the support of the Front of House team.
- Manage and motivate the Front of House team, ensuring warm, polished and consistent service.
- Work closely with the Head Chef to ensure smooth service, strong communication, food quality and guest satisfaction.
- Oversee housekeeping standards, room readiness, public areas and overall hotel presentation.
- Support reception, guest arrivals, departures, guest requests, complaints and service recovery.
- Ensure The Orangery is welcoming to residents and non-residents for coffee, lunch, afternoon tea, dinner and drinks.
- Drive food and beverage performance, including covers, resident dining, local trade, average spend, and repeat custom.
- Manage rotas, staffing levels and service cover in line with business needs and profitability.
- Maintain high standards across guest experience, cleanliness, maintenance, compliance and team communication.
- Work with Juniper Property Services, our sister company, on reservations, pre-stay communication, guest handovers and operational support.
- Build a positive team culture where people feel supported, trained and motivated to deliver their best work.
- Help drive the future success, reputation and commercial performance of Victoria Square Hotel.
About You:
We are looking for someone who is warm, confident, organised and genuinely passionate about hospitality.
The ideal candidate will have strong Food and Beverage experience and will be comfortable leading service on the floor. You may currently be a Restaurant Manager, Food and Beverage Manager, Assistant General Manager or experienced hospitality manager looking for the next step.
You should have:
- Strong experience in Food and Beverage, ideally in a restaurant, hotel, boutique hospitality or premium service environment.
- Confidence running restaurant service and leading a Front of House team.
- Excellent guest service skills and a natural ability to create a warm welcome.
- Strong leadership skills, with the ability to train, coach and motivate a team.
- Good commercial awareness, including sales, labour, guest spend, staffing and service efficiency.
- Strong organisational skills and attention to detail.
- The ability to stay calm, professional and solution-focused under pressure.
- A hands-on approach and willingness to be visible in the operation.
- Experience managing or working closely with hotel reception and housekeeping would be beneficial.
- Experience with hotel systems, restaurant booking systems or EPOS systems would be advantageous, but training can be provided.

You will need to be comfortable working in a small boutique environment where the General Manager is involved in the detail. One moment you may be leading service in The Orangery, the next you may be handling a guest request, reviewing housekeeping standards, supporting the team or working on ways to grow the business.
