Waldorf Astoria London - Admiralty Arch is seeking a Sommelier for Café Boulud, to join the pre-opening team for this highly anticipated new luxury hotel opening later this year.
This is a unique opportunity for an experienced luxury hotelier to join the founding team and help shape the guest experience at this landmark hotel.
Located at the end of The Mall opposite Buckingham Palace, Waldorf Astoria London – Admiralty Arch will feature 100 elegant rooms and suites and 17,500 sqft of private residences. The hotel will open with two signature restaurants - Coreus by Clare Smyth and Café Boulud by Daniel Boulud - bringing together two of the world’s most celebrated Michelin-starred chefs. Guests will also enjoy a world-class spa, state-of-the-art fitness facilities, and a collection of grand event spaces, including a ballroom for up to 320 guests.

Here's what you'll do during a typical day:
As Sommelier for Café Boulud, you will curate and elevate the wine experience, offering expert guidance and refined recommendations that complement our culinary vision and enhance every Guest and Member interaction. You will demonstrate impeccable product knowledge, intuitive service, and commercial awareness while contributing to departmental performance and luxury brand standards.
Your responsibilities will include the following, performed to the highest standards of excellence:
- Deliver authoritative, current, and refined wine knowledge to Guests with confidence and discretion
- Recommend wines that thoughtfully complement menu selections, occasions, and individual preferences
- Present, describe, and sensitively up‑sell wines to enhance the overall dining experience
- Collaborate on wine selections aligned with new menus, ensuring consistency with budgetary and commercial objectives
- Maintain an elegant, professional presence with a strong emphasis on personalised hospitality and guest engagement
- Ensure accurate and seamless billing at all times
- Support the achievement of departmental revenue and performance targets
- Serve alcoholic and non‑alcoholic beverages in full compliance with licensing and liquor regulations for residents and non‑residents
- Adhere to all hotel security procedures, fire regulations, and health and safety legislation
Participate fully in all training initiatives provided by the hotel

What are we looking for?
A Sommelier within Hilton’s luxury portfolio acts as a trusted ambassador for both brand and experience—always in service of our Guests and in close collaboration with fellow Team Members. To succeed in this role, you will demonstrate the following attributes and capabilities:
Previous experience in a guest‑facing service role within the hotel, leisure, or premium retail sector
Impeccable grooming and presentation standards befitting a luxury environment
Excellent verbal communication skills and an engaging, polished service style
A genuine passion for wine, hospitality, and delivering exceptional guest experiences
Ability to work independently while contributing seamlessly within a team
It would be advantageous in this position for you to demonstrate the following capabilities and distinctions:
- Experience as a Wine Waiter or Sommelier within an upscale or luxury dining environment
- Recognised Sommelier certifications or formal wine qualifications
