A great opportunity has risen at Orton Hall you an experienced Chef to join the fantastic team at Ramblewood Inn, the pub at Orton Hall Hotel & Spa. With an award winning restaurant, an on site pub, spa and leisure club, we are looking for someone that wants to put their name on it and drive the evaluation of the current Food & Beverage offerings and to redesign the offering. We are looking for someone that is passionate about food, the team and wants to build his/her own team and re-design the operation. A fantastic opportunity to join a great team!
Your responsibilities would be:
1. Work with the General Manager to analyse business performance and to assist in driving the business strategy for each Food & Beverage outlet and develop, cost and implement menus/concepts accordingly
2. Attend any communications meetings e.g. Operations, Head of Department, Morning meeting to ensure awareness of all business aspects and to ensure that all relevant departments are aware of the current offering
3. Ensure recipes are followed to ensure risk of cross contamination are kept to a minimum
4. Sourcing produce from local suppliers ensuring this is reflected in the costing of dishes
5. Ensure standards are followed to ensure consistency of quality
6. Work as part of a team in preparation, cooking, garnishing, or presentation of food to the highest standards of quality, safety and consistency
7. Follow standards and regulations relating with cleanliness, hygiene and safety
8. Check the quantity and quality of received products
9. Ensure departmental compliance with all relevant regulations (e.g. COSHH, HACCP, Fire & Food Hygiene)
10. Conduct Monthly stock-takes and oversee all recording of wastage, transfers etc. to ensure that food cost/Gross Profits are achieved as per budget.
