About FUMI
FUMI is a higher-end restaurant and bar with a strong focus on quality, detail, and atmosphere. We take pride in what we do, from the drinks we serve to how our space looks and feels throughout service. Over time, we’ve built a friendly, professional team who support each other and care about standards, and we’re now looking to welcome an experienced bartender to join us.
This role is primarily bar-based, with some involvement in supporting the floor team, particularly with wine service and running drinks during busy periods.
The Role
We’re looking for a confident, knowledgeable bartender who enjoys working in a well-organised bar and understands the rhythm of service. Someone who stays calm when it’s busy, notices what needs doing, and takes pride in keeping the bar clean, stocked, and running smoothly.
This isn’t an entry-level role, previous bar experience and product knowledge are important, but we’re equally focused on finding someone who fits well within our team and enjoys working in a quality-led environment.
Responsibilities
- Preparing and serving classic cocktails, wines, spirits, and non-alcoholic drinks to a high standard
- Providing professional wine table service, including confidently opening and presenting bottles at the table
- Keeping the bar clean, organised, and well-prepared throughout service
- Communicating clearly with the floor team to ensure drinks are delivered efficiently
- Supporting the wider team by running drinks and assisting the floor when needed
- Using quieter moments productively — restocking, polishing glassware, and preparing for peak service
- Opening and closing the bar in line with food hygiene and cleaning standards
- Handling cash and POS transactions accurately
- Following licensing, food safety, and hygiene regulations at all times
What We’re Looking For
- At least 1 year of bartending experience
- Good knowledge of classic cocktails and core spirits
- A solid understanding of wine styles and service, including table presentation
- Experience working in a fast-paced restaurant or bar environment
- A natural sense of organisation and cleanliness behind the bar
- Clear communication and a calm approach during busy services
- Reliability, professionalism, and pride in your work
Weekend availability is expected, though we’re flexible where possible with scheduling.
