Job Description | Junior Sous Chef - Employed Position
Hours: Approximately 40 hours per week, across a flexible rota including evenings, weekends and busy trading periods
Salary: £13.85 per hour, plus gratuity

Reporting to the Head Chef and Sous Chef, the Junior Sous Chef is a step-up position within our kitchen team, sitting between Chef and Sous Chef.
You’ll remain hands-on during prep and service, cooking and running sections alongside the wider kitchen team, while taking on greater responsibility for service, standards and supporting the development of the team.
We’re looking for someone who is already a strong and confident chef and is ready to develop their leadership skills, take greater ownership and progress towards a Sous Chef position.
What We’re Looking For
- Strong experience working as a Chef de Partie or equivalent in a quality professional kitchen
- A strong grounding in classical cooking techniques and kitchen fundamentals
- Confidence working across and running different sections of the kitchen
- Consistently high standards of food preparation, presentation and portioning
- Strong organisational and communication skills
- A calm, confident approach during busy services
- Good understanding of food safety, allergens, prep systems and kitchen operations
- Confidence supporting and guiding other members of the kitchen team
- A willingness to take responsibility and help solve problems as they arise
- A positive, collaborative approach to leadership
- A genuine desire to develop towards a Sous Chef role
- Passion for food, drink and delivering memorable hospitality
What You’ll Be DoingKitchen Operations & Service
- Prepare and cook dishes to specification and consistently high standards
- Work confidently across multiple sections of the kitchen
- Take responsibility for ensuring your own section is organised, prepared and ready for service
- Support the Sous Chef and Head Chef in ensuring the wider kitchen is prepared and ready for service
- Help coordinate service, maintaining communication between sections and ensuring dishes leave the kitchen on time and to specification
- Maintain consistency in presentation, quality and portioning
- Identify and communicate issues quickly during service and help resolve them
- Maintain strong communication with the front-of-house team
- Take greater responsibility for service when delegated by the Head Chef or Sous Chef
Standards & Preparation
- Support daily food preparation and ensure agreed prep levels are maintained
- Follow and help reinforce recipes, prep systems and plating specifications
- Monitor standards across the kitchen and raise inconsistencies with the Sous Chef or Head Chef
- Ensure allergen procedures and food safety standards are followed correctly
- Contribute to pre-service briefings and communicate relevant information to the wider kitchen team
- Lead by example in maintaining a clean, organised and professional kitchen
Team & Development
- Support the Head Chef and Sous Chef in maintaining a positive and professional kitchen culture
- Provide day-to-day guidance and support to Chefs and junior members of the kitchen team
- Help train new and developing members of the team on dishes, preparation and kitchen standards
- Lead by example through professionalism, punctuality, organisation and work ethic
- Help maintain clear communication within the kitchen during prep and service
- Raise performance or training concerns with the Sous Chef or Head Chef
- Begin developing the leadership and decision-making skills required to progress into a Sous Chef position
Stock & Waste
- Support stock rotation and correct storage procedures
- Monitor stock levels within your section and communicate requirements
- Help maintain correct par levels for service
- Support deliveries and ensure ingredients are checked, stored and rotated correctly
- Help minimise waste through good preparation, portion control and stock management
- Accurately record and communicate wastage
- Support stock takes when required
Hygiene & Food Safety
- Support the kitchen team in maintaining a 5-star Environmental Health rating
- Follow and help maintain cleaning schedules
- Ensure daily food safety tasks, including food and fridge temperature checks and cleaning logs, are completed correctly when delegated
- Maintain high standards of food hygiene, allergen awareness and kitchen safety
- Lead by example in maintaining a safe, clean and organised kitchen at all times
Development & Progression
The Junior Sous Chef role is designed as the next step between Chef and Sous Chef.
Alongside being a strong chef, you’ll begin taking greater responsibility for the people and operation around you, helping lead services, supporting other chefs, maintaining standards and developing your understanding of the wider running of the kitchen.
