Bermondsey Bar & Kitchen is a vibrant all-day bar, restaurant and events venue in the heart of Bermondsey Street. With a 750 capacity venue running lunch through to late-night drinks, live sport, DJs and private events, our team is passionate about creating memorable experiences for every guest.
We are seeking an Ambitious and Motivated Bar Manager to join our hospitality team and drive exceptional guest experiences. This is an excellent opportunity for an experienced Manager looking to develop their career with clear progression opportunities within a growing company.
Key Responsibilities
- Take full ownership of the day-to-day running of the bar.
- Manage ordering and supplier relationships
- Lead the bar team during service, ensuring speed, consistency and quality
- Ensure all drinks are prepared and served to company specifications
- Maintain exceptional cleanliness and organisation across all bar areas
- Open and close the venue, including cash reconciliation and daily reporting
- Ensure compliance with Licensing, Health & Safety and Food Safety legislation
- Complete weekly stock counts and end-of-month stocktakes
- Monitor stock variances and implement action plans to minimise losses
- Maintain accurate par levels for all beverages, garnishes and consumables
- Manage cellar standards, line cleaning schedules and product rotation
- Drive gross profit through effective purchasing, pricing awareness and waste reduction
- Recruit, train and develop the bar team
- Identify opportunities to increase drink sales through upselling and promotions
- Ensure staffing levels are appropriate during peak trading periods
- Work closely with the Floor Manager to ensure seamless service between the bar and restaurant
- Support private events and major sporting fixtures
- Assist the wider management team whenever operationally required
Requirements
- Proven experience in Bar/Restaurant management or a similar hospitality role with leadership responsibilities (3 years preferred)
- Managing large teams (15-20 staff)
- Commercial understanding- Daily reporting, Forecasting
- Event experience
- Cocktail experience
- Wine experience (preferred)
- Experience with managing large bookings
- Personal license (preferred)
- Evening, Weekend and Bank Holiday availability
