Lead Chef – The Waterfront Inn, Westward Ho!
We’re looking for an experienced hands‑on, commercially aware Lead Chef to help drive or food offering, quality, consistency and profitability across family orientated kitchen.
This role is ideal for a strong chef who enjoys leading a team, shaping menus, and keeping standards high.
What You’ll Be Doing
Take responsibility for food GP, ensuring dishes are costed correctly and margins stay on target.
Support the review and improve menus at The Waterfront Inn to ensure they are well‑priced, efficient to deliver, and commercially successful.
Support accurate dish costing and sensible purchasing, making sure ingredients are used effectively and reflect the Braddicks brand.
Consistency & Standards
Maintain clear portion sizes, recipes and dish specifications.
Make sure all kitchen team members follow these standards so dishes look great, taste great, and meet cost expectations.
Team & Rota Support
You will plan rotas that match trade levels, improving productivity while keeping quality high.
Food Safety & Compliance
Lead the day‑to‑day running of the Food Safety Management System.
Ensure the kitchen follows HACCP, FSA and EHO requirements.
Promote safe working practices and high hygiene standards across the kitchen.
About You ........
You will have a strong background in professional kitchens with at least 5 years experience of leading a kitchen and team.
You will be confident with costing, GP and menu planning.
You will demonstrate flair with dish innovation and planning
Passionate about consistency, quality and teamwork.
Knowledge of food safety and compliance (HACCP/FSA).
Able to support chefs, lead by example and drive standards.
