Role Overview
Grand Cholas is looking for a hands-on, live-in Restaurant Manager to take full, end-to-end ownership of theday-to-day running of the restaurant. This is a general management role covering front-of-house service, team, leadership, stock and cash control, compliance, and driving covers and revenue — freeing the owners fromday-to-day operational involvement. Live-in accommodation is provided, reflecting the scope of the role and the standard of ownership expected.
Key Responsibilities (End-to-End Ownership)
Service & floor management
- Full responsibility for dine-in, takeaway/collection and delivery service running smoothly across all openinghours
- Floor presence throughout service — greeting, seating, table management, and resolving issues in real time
- Overall ownership of guest experience, reviews and online ratings (currently Google 4.8)
Business growth
- Own the plan to grow dine-in covers and recover trade where it has softened
- Grow bar/drinks attachment rate as a revenue lever (currently well below UK norm)
- Work with owners on offers, events and covers-driving initiatives
Team leadership
- Manage, rota and develop the front-of-house team; day-to-day liaison with the kitchen team
- Recruit, train and performance-manage FOH staff as needed
- Own staff conduct, discipline and standards on the floor
Cash, stock & admin
- End-of-day cash and card reconciliation, till floats, and daily reporting to owners
- Bar and FOH stock control, ordering and supplier checks
- Day-to-day admin: rotas, holiday cover, incident logs
Compliance
- Food safety, health & safety and licensing compliance on the floor and bar
- Maintain and complete the restaurant's cleaning, temperature and due-diligence log sheets
- Ensure the team follows correct procedures for allergens, alcohol service and age-restricted sales
Person Specification
Essential
- Proven experience as a Restaurant Manager, ideally in a busy, high-covers, full-service environment
- Comfortable taking full end-to-end ownership of a site with minimal day-to-day owner involvement
- Strong floor presence, guest-facing skills and calm under pressure during peak service
- Working knowledge of food safety, allergens and licensing requirements
- Confident with cash handling, EOD reconciliation and basic reporting
- Willing to live on-site/locally as part of a live-in arrangement
Desirable
- Previous experience managing an Indian restaurant strongly preferred Good working knowledge of Indian cuisine — dishes, regional styles and how they are typically served — to guide guests and support the kitchen/floor handover
- Experience growing a drinks/bar offer alongside food service
Pay: £12.71-£15.00 per hour
