The Role
As Chef de Partie, you shall be entrusted with the management of your designated section, ensuring every dish leaving your station reflects the high standards expected at Mr Fogg's City Tavern. You will work alongside a dedicated brigade, maintaining exceptional food quality whilst supporting the smooth and efficient operation of the kitchen.
This role demands organisation, creativity, consistency, and a calm head under pressure, with a genuine passion for delivering memorable dining experiences.
Our venues are open 7 days a week, your shifts therefore will be spread across the week. As late night bar operators, regularly working at weekends & past midnight is a requirement of the role so it is essential you are able to get home late at night.

Your Principal Duties
- Take full ownership of your assigned section during service.
- Prepare, cook, and present dishes to the highest standards of quality and consistency.
- Ensure mise en place is completed thoroughly before each service.
- Maintain excellent food hygiene, cleanliness, and organisation throughout your section.
- Follow recipes, specifications, and presentation standards with precision.
- Monitor stock levels and communicate ordering requirements to senior chefs.
- Minimise waste through careful stock rotation and efficient preparation.
- Ensure all food is stored, labelled, and handled in accordance with food safety legislation.
- Assist with training and supporting Commis Chefs and Kitchen Assistants.
- Work collaboratively with the wider kitchen brigade to deliver seamless service.
- Maintain equipment responsibly and report maintenance issues promptly.
- Uphold health and safety standards at all times
- Previous experience as a Chef de Partie or an accomplished Demi Chef de Partie ready to progress.
- Excellent knowledge of fresh food preparation and modern kitchen practices.
- Strong organisational and time management skills.
- The ability to remain composed during busy services.
- A genuine passion for British cuisine and seasonal produce.
- Excellent communication and teamwork skills.
- Level 2 Food Safety Certificate (preferred).
- Flexibility to work evenings, weekends, and public holidays.
