Sous Chef wanted at The Berwick — a country pub under the South Downs, cooking food worth driving out for.
We're after a Sous Chef to be the Head Chef's right hand: someone who can hold a service on their own, keep the standard when nobody's watching, and take the kitchen forward rather than just keep it ticking.
The Berwick is a proper country pub. Seasonal menus, good local produce, cooked simply and cooked well. It's the kind of kitchen where you'll actually get to develop dishes rather than reheat someone else's decisions.
What you'll be doing
- Running services and taking full charge of the kitchen on the Head Chef's days off
- Holding consistency and presentation across every plate that leaves the pass
- Ordering, prep lists, stock control, wastage and GP
- Contributing to menu development and specials — your ideas are wanted here
- Training and developing the CDPs and commis behind you
- Food safety, allergens and due diligence kept properly
What we're looking for
- Experience at Sous Chef level, or a strong CDP ready to step up
- Fresh food background. This isn't a kitchen where things arrive in bags
- Calm, organised and reliable. The Head Chef needs to be able to switch off on days off
- Attention to detail and pride in what goes out
- Someone who wants to build a career rather than fill a rota slot
The money
Up to £30,000 a year over 40–45 hours a week, depending on experience, plus a share of tips. We're flexible on hours and happy to pay hourly instead if you'd prefer.
