Lisboa Patisserie is a renowned Portuguese bakery and café with three London locations, celebrated for our iconic Pastéis de Nata, traditional pastries, and high‑quality handmade products. We are a fast‑paced, high‑volume production kitchen with a strong reputation for consistency, authenticity, and excellence.
We are now seeking an experienced, disciplined, and highly organised Head Pastry Chef to lead our pastry team, protect the quality of our house products, and drive the section forward with creativity and efficiency.
Job Overview
As Head Pastry Chef, you will take full ownership of the pastry section — overseeing production, managing workflow, and ensuring that every item meets our established standards. You will maintain the integrity of our classic recipes while also contributing fresh ideas and seasonal innovations.
This role requires strong leadership, excellent organisational skills, and the ability to run a structured, waste‑efficient kitchen.
Responsibilities
- Lead, supervise, and support the pastry team to ensure smooth, efficient daily production.
- Take full ownership of the pastry menu, including classic house items and new product development.
- Maintain and protect the quality of all signature pastries and cakes, ensuring consistency across all batches.
- Introduce new ideas, seasonal specials, and improvements that complement the brand and elevate the range.
- Organise and optimise workflow to ensure productivity, clear task allocation, and timely output.
- Implement and monitor systems to reduce waste, improve portion control, and manage costs effectively.
- Ensure strict compliance with food safety, hygiene, and allergen‑control standards.
- Oversee recipe adherence, production methods, and quality checks.
- Manage stock levels, ordering, and supplier relationships for the pastry section.
- Train, mentor, and develop pastry chefs, bakers, and cake decorators.
- Maintain a clean, organised, and well‑structured kitchen environment at all times.
- Lead pastry planning for seasonal menus, special events, and product launches.
Working Hours (45 hours per week)
Standard schedule — subject to change with notice
- Tuesday: 5am–12pm
- Wednesday–Friday: 5am–1pm
- Saturday: 4am–1pm
- Sunday: 5am–10am
Additional Requirements
- Minimum 5 year pastry experience, including at least 2 years in a senior or supervisory role
- Right to work in the United Kingdom.
- Ability to reliably commute to W10 or plan relocation.
