Weekend Service Chef — Thrift Taco

Thrift Taco is an East London food brand serving chef-driven Mexican food from our residencies at Howl at the Moon and Great Beyond Brewing. We focus on great ingredients, housemade sauces, strong cooking and creating a fun, welcoming atmosphere without taking ourselves too seriously.
We’re looking for an experienced cook or chef who can confidently support and run weekend services at Howl at the Moon.
Important:
This role is focused on weekend service. Typical shifts are expected to be approximately:
- Friday: 3pm–11pm
- Saturday: 10am–11pm
- Sunday: 11am–9pm
Exact hours may vary depending on trading, events and rota needs. There may also be an opportunity to expand into Friday lunch service as the business grows.
Weekend availability is essential for this role.
What you’ll do:
- Prepare for service
- Run kitchen service independently where required
- Open and close the kitchen
- Maintain quality, consistency and food safety standards
- Manage stock and communicate prep requirements
- Work alongside kitchen assistants and junior staff where required
- Help keep the kitchen organised, clean and ready for busy services
- Support improvements to kitchen systems as we grow
We’re looking for someone who is:
- Reliable and organised
- Calm under pressure
- Comfortable in busy weekend services
- Comfortable working independently
- Comfortable taking responsibility and ownership
- Low ego and easy to work with
- Interested in quality food and hospitality
Experience running service independently in pubs, casual dining, street food or independent restaurants is strongly preferred.
We care far more about reliability, ownership and attitude than fine dining experience or fancy CVs.
