Hours: 45 per week average - This is a senior leadership role, and flexibility is required, including evenings, weekends, and busy trading periods. Time off in lieu will be provided where appropriate.

Reporting to the General Manager and working collaboratively with the wider leadership team, you will lead the kitchen operation at Gills & Co. You will be responsible for menu development, team leadership, and delivering a consistently high standard of food and service. Alongside this, you will provide a seasonal afternoon tea offering for our sister site, The Gillmont, and be the lead for our club sandwich offering.

What We’re Looking For
- Proven experience as a Head Chef, or a strong Sous Chef ready to step up
- Passion for creating seasonal, high-quality dishes that pair well with wine
- Excellent organisational, communication, and leadership skills
- Strong understanding of kitchen operations, including GP, stock control, and health & safety
- A calm, confident presence during service

What you’ll be doing
Menu Development & Execution:
- Curate bi-monthly seasonal tasting menus
- Develop and evolve the sharing plates, cheese, and charcuterie offering in line with our wine offering
- Curate seasonal Afternoon Tea menus for The Gillmont (our sister venue) and be the lead in organising our Club Sandwich offering
- Ensure all menus are inclusive of dietary requirements (vegetarian, vegan, gluten-free, dairy-free)
- Finalise menus at least two months ahead of launch, ensuring:
- Full dish costings to meet the target GP
- Allergen sheets, plating specifications, and prep guides are completed
- Internal tastings are conducted for feedback and sign-off
- Work with the leadership team to achieve and exceed kitchen revenue targets
Kitchen Operations & Team Leadership:
- Run day-to-day kitchen operations
- Ensure service runs smoothly, with dishes consistently sent out on time and to spec
- Maintain strong communication with front-of-house, especially during pre-shift meetings
- Uphold high standards of cleanliness and organisation throughout service
- Support, mentor, and develop the kitchen team to build a positive and high-performing culture
Stock & Supplier Management:
- Order and manage stock effectively to balance quality, cost, and availability
- Maintain accurate par levels and minimise waste
- Build strong relationships with suppliers, resolving issues and managing credits with the accounts team
- Conduct quarterly stock takes and monitor performance
Hygiene & Food Safety
- Lead the kitchen team to maintain a 5-star Environmental Health rating
- Implement and manage a robust deep cleaning schedule
- Ensure all daily compliance tasks (temperature checks, cleaning logs, etc.) are completed and recorded
- Lead by example in maintaining a safe, clean, and organised kitchen
