Alma is a whole grain mill and bakery set up by James Beard Award winner Graison Gill with Natoora. By freshly stone milling our wheat and using the whole grain in our loaves, we believe we can revive the integrity and flavour of bread.
Our entire process is guided by quality. We select heritage, modern and population wheat from French and British growers and mill in-house using our New American Stone Mill. From Guérande sea salt to seeds from Hodmedod's, each additional ingredient enhances — never masks — the flavour of the original grain. By using our flour at its freshest, slow-fermenting our doughs, and baking our loaves at super high temperatures in our Polin oven, we produce bread with a rich crumb and golden crust, as it should be.

Job Summary
Embark on an exciting journey as a Trainee Baker, where you will develop essential skills in the craft of whole grain bread making, from dough to loaf. This paid learning position offers hands-on experience in a working bakery, learning directly from experienced bakers who mill, ferment, and bake with some of the finest heritage grain available. Your role will focus on supporting daily production, gaining practical baking skills, and understanding the care that goes into every stage of the process — from scaling dough to the final bake. Duties
- Assist the team with daily operational tasks across the bakery
- Support production and the daily bake, working alongside experienced bakers
- Help with packing and quality checking of finished products
- Pack bread for deliveries, ensuring products meet Alma's standards
- Maintain required standards of equipment and site cleanliness
- Clean bakery equipment and ancillary items as part of daily routine
- Prepare bannetons ahead of each bake
- Learn to scale recipes and dough accurately under supervision
- Follow instructions from experienced bakers to build your technical skills and understanding of the wider production process
Experience
- No prior professional baking experience required; a genuine passion for baking, food, and flavour is essential
- Experience in wholesale bakery production or a commercial kitchen is beneficial but not required — training will be provided
- Strong attention to detail and a commitment to the highest standards of food safety, hygiene, and team safety
- A desire for and commitment to growth, creativity, and teamwork
- Ability to work as part of a team in a fast-paced production environment
- Good manual dexterity and physical stamina for standing, lifting, and handling materials during production
