The Role: Experienced Butcher (Night Shift)
We're looking for an experienced Butcher to join our overnight team, preparing orders for delivery to restaurants, pubs, and private customers across Britain by our fleet of vans. You'll bring a strong grounding in butchery skills and take real ownership of the quality and accuracy of every order that leaves our premises.
This is a hands-on, skilled role at the heart of our operation. Working through the night, you'll take raw carcasses and primal cuts through to finished, precisely prepared orders — applying the same exacting standards our customers have come to expect for over fifty years. You'll have real autonomy over your section of the shift, deciding how best to sequence and prepare your workload to hit despatch deadlines, while still working as part of a close-knit overnight team.

Responsibilities
- Skilled preparation, boning, and cutting of meat to a high standard, ready for despatch
- Breaking down carcasses and primal cuts in line with customer specifications
- Preparing and picking orders accurately for delivery across Britain
- Safe handling of raw produce in line with food hygiene standards
- Use of food manufacturing equipment such as vacuum-packing machinery
- Stock rotation, labelling, and hanging processes
- Maintaining clean, high standards throughout and at the end of each shift, including equipment and workspace hygiene
- Supporting and guiding less experienced team members where needed, sharing knowledge of cuts and technique
- Flagging any quality or stock issues to supervisors promptly
- Working in a cold-ambient environment
Key Skills
- Proven experience working as a butcher, ideally in a fast-paced trade or wholesale environment
- Strong knife skills and a good working knowledge of cuts and carcass breakdown
- Ability to work accurately and efficiently to meet despatch deadlines, without compromising on quality
- Comfortable working night hours and able to work well with minimal supervision
- Punctual and driven, able to work consistently and efficiently to deadlines
- Good verbal communication and teamworking skills
- Good personal level of grooming and professional presentation
- Sound understanding of food safety and hygiene standards
- A genuine interest in maintaining the standards of a business built on its reputation for quality
Experience
Previous experience as a butcher is essential. We will, of course, provide training on the unique way Walter Rose & Son prepare each cut of meat, so you can bring your existing skills up to our house standard from day one.
Hours
Night shift, 10pm to 6am, working Friday and Sunday nights plus additional nights Monday to Thursday, with one rota'd night off during the week. Saturday nights are not worked.
