Salary: £31,000–£32,000 per annum
Hours: 39 hours per week, worked over 5–6 days

Overview
We are seeking an experienced Specialist Tandoori Chef to join our team in Dunfermline. The ideal candidate will have extensive experience in authentic Indian and Nepalese cuisine, with specialist expertise in preparing traditional tandoori dishes. This role requires excellent culinary skills, the ability to supervise junior chefs, and a commitment to maintaining the highest standards of food quality, hygiene, and customer service.
Key Responsibilities
- Prepare, marinate and cook a wide variety of authentic tandoori dishes using traditional cooking techniques.
- Ensure consistency, quality and presentation of all dishes served.
- Train, supervise and support junior chefs and kitchen staff.
- Purchase ingredients and liaise with suppliers to ensure the availability of high-quality produce.
- Manage stock control, stock rotation and inventory levels to minimise waste.
- Carry out regular quality checks on food preparation and finished dishes.
- Ensure compliance with food safety, health and hygiene regulations at all times.
- Monitor food temperatures and maintain accurate food safety records.
- Maintain cleanliness and organisation throughout all kitchen and food preparation areas.
- Care for and maintain specialist tandoori ovens and kitchen equipment.
- Assist with cost analysis, food cost control and preparation of kitchen reports and work schedules.
- Perform additional duties as reasonably assigned by management.
Essential Requirements
- A minimum of 3 years' proven experience working within an Indian kitchen.
- At least 3 years' culinary expertise in authentic Indian and Nepalese cuisine.
- Extensive experience preparing traditional tandoori dishes and operating specialist tandoori equipment.
- Strong knowledge of Indian cuisine, spices, marinades and traditional cooking methods.
- Experience supervising and training junior kitchen staff.
- Good understanding of food safety, health and hygiene regulations.
- Strong organisational and time management skills.
- Good communication skills and a good standard of spoken English.
- Flexible, enthusiastic and passionate about food and the hospitality industry.
- Ability to work effectively as part of a team and perform well under pressure.
