Job Summary
Akara, the acclaimed Borough Yards restaurant and sister venue to the Michelin-starred Akoko, is seeking an experienced Senior Sous Chef to support the Head Chef in delivering exceptional West African and Brazilian-inspired cuisine. The successful candidate will play a key leadership role in kitchen operations, ensuring outstanding food quality, efficient service, staff development, and adherence to the highest culinary standards.
Key Responsibilities
- Support the Head Chef in the day-to-day management of kitchen operations.
- Ensure all dishes are prepared and presented to the highest standards of quality and consistency.
- Lead and motivate the kitchen brigade during service, maintaining smooth and efficient operations.
- Assist in menu development, recipe creation, and innovation aligned with Akara's culinary identity.

- Monitor food safety, hygiene, cleanliness, and compliance with health and safety regulations.
- Collaborate closely with front-of-house teams to deliver an outstanding guest experience.
- Help manage stock control, ordering, waste reduction, and kitchen efficiency.
Requirements
- Previous experience as a Senior Sous Chef or Sous Chef in a fine dining or high-end restaurant environment.
- Strong leadership and team management skills.
- Passion for innovative cuisine and exceptional food quality.
- Ability to perform effectively in a fast-paced, high-pressure kitchen.
- Eagerness to learn new ingredients, techniques, and culinary traditions.
- Excellent attention to detail and commitment to maintaining high standards.
Preferred Skills
- Experience with modern, globally inspired cuisine.
- Knowledge of West African, Brazilian, or fusion cooking styles.
- Strong communication and coaching abilities.
- Understanding of food cost control and inventory management.
