Chef de Cuisine / Head Chef
Location: The View Restaurant at The Delmont Hotel, Scarborough
About the Role
We are looking for a passionate, driven and experienced Chef de Cuisine or Head Chef to work alongside and directly under our Executive Chef. This is a hands-on leadership role where you will be responsible for the day-to-day running of the kitchen, ensuring the highest standards of food quality, hygiene and service are maintained at all times.
This is a varied role that encompasses all aspects of the hotel's food operation. You will oversee the preparation and service of breakfasts for hotel guests and coach parties, evening meals for resident coach parties, as well as the daily lunch and dinner service within The View Restaurant. No two days are the same, so flexibility, organisation and a passion for producing exceptional food are essential.
You will play a key role in delivering outstanding dining experiences by preparing and presenting dishes to the highest possible standard while supporting, motivating and leading the kitchen team during busy service periods.
Key Responsibilities
- Oversee the day-to-day operation of the kitchen in the absence of the Executive Chef.
- Prepare, cook and present breakfasts for hotel guests and coach parties, ensuring a consistently high standard.
- Lead the preparation and service of evening meals for resident coach parties.
- Prepare, cook and present dishes for the restaurant's daily lunch and dinner service in accordance with our seasonal menus.
- Ensure every dish leaving the kitchen is impeccable in both taste and presentation.
- Maintain outstanding food quality and consistency throughout every service.
- Ensure all food safety, hygiene and health & safety regulations are adhered to at all times.
- Keep all HACCP records, temperature logs, cleaning schedules and other kitchen documentation accurate and up to date.
- Lead, motivate and direct the kitchen team during busy services while maintaining a calm and professional approach.
- Delegate tasks effectively and ensure all members of the team are working efficiently.
- Assist with stock control, ordering, stock rotation and minimising food waste.
- Support the training and development of junior chefs and kitchen staff.
- Work closely with the Executive Chef to maintain exceptional standards across every aspect of the kitchen.
- Undertake any additional duties or projects requested by the Executive Chef.
About You
The ideal candidate will have:
- Previous experience in a Chef de Cuisine, Head Chef or Senior Sous Chef role.
- Excellent leadership and organisational skills.
- The ability to remain calm under pressure in a fast-paced, high-volume kitchen.
- A genuine passion for producing outstanding food.
- Exceptional attention to detail and pride in presentation.
- Strong knowledge of food safety, HACCP and kitchen compliance.
- Excellent communication and team management skills.
- A positive, can-do attitude with a willingness to support the wider team whenever required.
- Flexibility to work early mornings, evenings, weekends and bank holidays.
