As we grow, we're strengthening our Central Production Unit — the team responsible for the laminated pastries and enriched dough products that define our bakery offering across cafés and wholesale customers.
About the Role:
We're hiring a Senior Viennoiserie Baker to join our Central Production Unit and take ownership of our laminated pastry and enriched dough production. Working closely with the Head Baker, you will ensure daily production is completed efficiently, freezer stock is maintained, junior bakers are supported, and every product meets Qima's quality standards.
This is a hands-on production role, not a desk-based one. You'll be at the bench every day — laminating, shaping, proofing, and baking croissants, pain au chocolat, pain suisse, Danish pastries, brioche, and seasonal products to the highest standard, while helping to raise the craft and consistency of the wider bakery team.
This is a role for someone who takes real pride in precision and craftsmanship — someone who understands dough at a technical level and wants to help build a production function that supplies cafés and wholesale customers across London.
Key Responsibilities:
1. Production
- Produce high-quality laminated doughs and viennoiserie.
- Prepare and bake croissants, pain au chocolat, pain suisse, Danish pastries, brioche, and seasonal products.
- Operate mixers, sheeters, retarder-proofers, and rack ovens safely and efficiently.
- Maintain consistency in shaping, proofing, and baking.
2. Production Planning
- Complete daily production according to plan.
- Maintain agreed freezer stock levels.
- Escalate production risks or shortages to the Head Baker promptly.
3. Quality
- Monitor dough development and fermentation.
- Minimise waste and follow recipes accurately.
4. Team Support
- Train and support junior bakers.
- Promote a positive and professional working environment.
5. Food Safety
- Follow HACCP and SALSA procedures.
- Maintain hygiene standards and complete production records accurately.
Who We're Looking For:
You are a structured, hands-on baker who takes pride in consistency, precision, and craftsmanship at scale. You are proactive, reliable, and comfortable taking ownership of production in a fast-paced Central Production Unit.
This role sits at the heart of our bakery operation. It's not about recipe development from scratch — it's about executing our viennoiserie programme to the highest standard, day in and day out, while supporting the team around you.
Required:
- Minimum 5 years' artisan bakery experience.
- Strong viennoiserie and laminated dough expertise.
- Experience using spiral mixers, sheeters, and rack ovens.
- Excellent understanding of dough handling and fermentation.
- Strong organisational skills, attention to detail, and reliability.
Desired:
- Experience in a Central Production Unit environment.
- SALSA/BRC knowledge.
