Night Kitchen Manager — The Breadbox

The Breadbox is looking for an experienced Night Kitchen Manager to take full charge of the overnight kitchen. Every product must be prepared, packed and arranged to a high standard so the sandwich vans can leave complete and on time each morning.
This is a hands-on night role. You will prepare food, arrange products for the vans, place orders, take in deliveries and leave the kitchen ready for the day team. For most of the shift you will be the person in charge.
What the job involves
- Lead the night kitchen and keep food preparation, packing and presentation to a consistently high standard
- Arrange and load products so each van is complete, labelled and ready for the morning run
- Prepare food to company recipes and specifications
- Order ingredients, packaging and consumables so the kitchen is never short
- Receive deliveries, check them against invoices and store stock correctly
- Complete hygiene, allergen, temperature and traceability checks throughout the shift
- Manage waste, stock rotation and end-of-shift cleaning
- Manage the night team, allocate work and give a clear handover to the day team
- Deal with shortages, late deliveries or equipment problems quickly so work is not delayed
Experience required
- Experience is essential. This is not a training role.
- Minimum 5 years’ experience as a manager in the same company.
- Experience in fast-paced kitchens is essential. You must already be used to working at speed, under time pressure, without letting standards drop.
- People management is important. You must be able to lead a team, set the pace, correct poor work straight away and keep people working together through a busy night.
- All relevant certificates and qualifications must be held and in date. Bring copies.
- Solid experience with food preparation, ordering, goods-in, stock control and deliveries.
- Experience running a shift on your own, including checks, records and cleaning, without waiting for someone else to set the standard.
- Flexible on finish time when the work demands it. The shift is 03:00–10:00, but times can differ. Getting the work finished to standard is the priority.

Core shift 03:00 to 10:00, Sunday to Thursday.
Start and finish times can differ depending on production and van times.
