Our menu has a distinct Italian focus with seasonally driven dishes to high-end Italian comfort food and handcrafted and wood fired pizzas.
We are looking for an ambitious, hands-on, and passionate Head Chef to lead our kitchen team, drive culinary standards, and elevate our Italian-inspired offering to the next level.
The Role
As Sous Chef, you will be the right hand to the Head Chef. You will take a lead role in the day-to-day operations of the kitchen, managing service, mentoring junior staff, and ensuring that our Italian-inspired menu is executed to the highest quality.
Crucially, pizza is a core pillar of our concept, so we need someone who understands traditional Italian cookery and has hands-on experience with dough fermentation, stretching, and oven management to maintain our high standards during service.
Key Responsibilities
● Kitchen Management: Support the Head Chef in the day-to-day management of the kitchen brigade, deputizing in their absence.
● Service Execution: Lead the line during busy service hours, ensuring precise timing, quality, and presentation of every dish.
● Pizza Section Oversight: Take ownership of the pizza section when required, ensuring consistent dough handling, toppings, and bake quality.
● Team Mentorship: Train and develop junior chefs, helping them improve their technical skills in both Italian and classic pub cookery.
● Stock & Quality Control: Assist with stock management, ordering, and ensuring that all food storage and preparation meet strict food safety guidelines.
● Food Safety & Compliance: Ensure the kitchen adheres to all UK food safety and hygiene regulations at all times.
The Ideal Candidate
● Proven Experience: Previous experience as a Sous Chef or a strong Junior Sous/Chef de Partie in a high-volume gastropub or Italian restaurant.
● Italian Culinary Expertise: A good foundation in authentic Italian cooking techniques, particularly pasta and pizza preparation.
● Specialist Pizza Experience: Hands-on experience working with fresh pizza dough, fermentation methods, and deck or wood-fired ovens.
● Operational Reliability: A dependable, calm leader who thrives under the pressure of a busy service.
● Team Player: Excellent communication skills and the ability to work effectively within a close-knit team.
● Qualifications: Level 2 or 3 Food Safety and Hygiene certificate.
