Key Responsibilities
- Cut, trim, bone, and prepare meat (beef, pork, lamb, poultry) to specific standards.
- Portion meat accurately according to customer or business requirements.
- Advise customers on meat selection, preparation methods, and cooking techniques.
- Take and fulfil special orders.
- Provide friendly and professional service at all times.
- Follow strict food safety and hygiene regulations (e.g., proper handling, storage, and temperature control).
- Maintain cleanliness of workstations, tools, and equipment.
- Ensure compliance with local health and safety laws.
- Operate and maintain knives, grinders, slicers, and other butchery equipment safely.
- Sharpen and care for tools to ensure efficiency and safety.
- Receive, inspect, and store meat deliveries.
- Monitor stock levels and rotate products to minimise waste (FIFO – first in, first out).
- Report shortages or quality issues.
- Prepare and arrange meat displays attractively in counters or chillers.
- Label products accurately with prices and relevant information.
- Inspect meat for freshness, quality, and safety.
- Remove any spoiled or substandard products.
- Weigh, package, and price products correctly.
- Process payments and operate tills if required.
- Support promotions or seasonal product offerings.
