Job Title: Assistant Manager – Encore Bars Hospitality Group
Location: Edinburgh (various venues)
The Role
We’re looking for a hands‑on Assistant Manager to join our growing Edinburgh bar group. This is a highly active, floor‑based role – you’ll lead by example, work alongside the team, and take real ownership of shifts. You’ll support the GM and Deputy GM, drive service standards, handle guest issues, and help develop the team. It’s a clear stepping stone to senior management.
Our Venues
We currently operate four vibrant bars across Edinburgh: Boston New Town, Boston Old Town, Westside Rodeo, and Freddys – each with its own character, but all united by high standards and a party atmosphere. And we’re not stopping there – more venues are opening soon, so there’s huge room to grow with us.
What You’ll Do
- Run shifts: open/close, manage service pace, delegate tasks, and keep standards high.
- Work an active section (bar or floor) and step in wherever needed.
- Coach Supervisors and serving staff; spot and resolve floor dynamics.
- Keep the team active – deploy PR on the street, monitor productivity, and push sales.
- Handle guest complaints and model excellent service.
- Enforce licensing laws, Challenge 25, health & safety, and incident reporting.
- Assist with cash‑up, stocktaking, rotas, and administrative tasks.
What You’ll Bring
- Previous supervisory or team‑leader experience in hospitality.
- Solid knowledge of licensing, age verification, and health & safety.
- Strong communication, problem‑solving, and organisational skills.
- Available for evenings, weekends, and peak periods (Festival, Christmas, etc.).
- Hold a Personal Licence (Scotland) or willing to obtain within 6 months.
Desirable (but not essential)
- Experience with EPoS, booking systems, or rota software.
- Basic understanding of profit measures (GP, labour, stock).

Pay: £32,000.00-£34,000.00 per year
