Purpose of the role
To support the Head Chef in leading the kitchen at Brambles Restaurant & Deli, ensuring consistently high standards of food, service, cleanliness, and kitchen culture.
You will play a key role in the day-to-day running of the kitchen, helping to develop the team and deliver food that reflects our values of integrity, quality, seasonality, and innovation. You will be hands-on during service and take responsibility for the kitchen in the Head Chef’s absence.
You will be responsible for:
- Supporting the Head Chef in leading, training, and developing the kitchen team
- Taking responsibility for the kitchen and service in the Head Chef’s absence
- Working on the pass and leading service to a consistently high standard
- Preparing and delivering our all-day dining, Sunday roast, events, and deli menus
- Maintaining consistency, quality, and presentation across all dishes
- Supporting menu development and contributing ideas for seasonal dishes and specials
- Assisting with food costing, stock control, ordering, and reducing food waste
- Working with suppliers to maintain quality, value, and consistency
- Ensuring excellent food safety, hygiene, and allergen standards are maintained
- Maintaining high standards of kitchen cleanliness, organisation, and maintenance
- Supporting kitchen administration and ensuring relevant paperwork is completed
- Helping to manage and develop junior members of the kitchen team
- Working closely with the Head Chef and Operations Manager to support the overall performance of the business
- Creating a positive, professional, and supportive kitchen environment
What we are looking for:
- Previous experience as a Sous Chef
- Strong practical cooking skills and a genuine passion for high-quality, seasonal food
- Good butchery skills
- Food Hygiene Level 3, or willingness to obtain
- Confident working on the pass and leading a service
- Strong communication and teamwork skills
- The ability to lead and motivate a kitchen team
- Good understanding of food costing, GP, stock control, and waste management
- Organised and able to manage kitchen administration
- A proactive approach with the ability to work calmly under pressure
- Experience working across a varied menu, ideally including all-day dining, roasts, events, and deli production
- A creative approach to food and an interest in contributing to menu development
- A positive attitude and willingness to get stuck in wherever needed
- Comfortable appearing in social media content promoting the business
£16.50 per hour estimated hours 35-45 per week
Pay: £16.50 per hour
Work Location: In person
