- Small but busy countryside pub set in the picturesque Chiltern hills
- Reputation for hearty pub food, including classics, such as pies, stews, and roast dinners
- Popular destination for walkers, cyclists, and families making trips out to chilterns
- The current menu during the week includes pub classics, weekly specials, as well as sandwiches during the day. On the weekend, pub classics and specials continue with Sunday Roasts offered at Sunday lunchtime (Kitchen closed on Sunday evening)
- The pub is usually busiest on Saturday and Sunday with around 60-100 covers per service (lunch)
- Small close knit team formed of kitchen and FOH staff. Usually 2-3 people in the kitchen: Head chef, KP, and sous chef. Usually 2-5 people in FOH
- About the role:
- The head chef has responsibility for the kitchen and key decisions, such as writing the menu and managing kitchen operations
- Key responsibilities include:
- Menu creation
- Stock ordering
- Revenue and cost management
- Kitchen hygiene, food safety and compliance
- Kitchen staff rota management
- Maintaining consistency and quality
- Working well with front of house staff to deliver a smooth service
- Skills & experience requirements:
- Previous head chef or strong sous chef experience in a kitchen working with fresh food
- Ability to run a small team with a positive leadership style
- Strong organisational and time management skills, keeping calm under pressure in busy services
- Reliable and motivated to contribute
- Passionate about good food and hospitality
