Working at Plas Dinas Country House is less like a standard hotel role and more like becoming a custodian of a living history book. Nestled within fifteen acres of enchanting gardens with views toward the Menai Strait, the estate offers an atmosphere that is both grand and deeply intimate. As the former home of Lord Snowdon, you aren't just managing shifts—you are curating an experience that honours a rich royal heritage.
Plas Dinas Country House is a multi-award-winning property. Proudly part of the MICHELIN Guide with AA 2 Rosettes, we were awarded Best Hotel in Wales at the Good Hotel Guide Awards 2026, Visit Wales Best Hotel in Wales and Best Place to Eat in Wales 2025, and Condé Nast Johansens Best For Romance 2025. With Head Chef Daniel Ap Geraint leading our culinary vision, our ambitious team is actively working towards our first MICHELIN Star.
We are seeking a warm, driven, and detail-oriented Hotel & Restaurant Duty Manager to join our tight-knit team. In our world of "relaxed luxury," we believe standing out means being yourself. We celebrate individuality and encourage our team to show genuine personality on the floor rather than following a corporate script.
The Opportunity
We are looking for a key player to join our talented, dedicated, and long-standing team. This is a hands-on, floor-based role perfect for a hospitality professional who thrives in guest interaction, fine dining service, and operational excellence.
With eleven luxury bedrooms and our intimate Gunroom Restaurant, the scale allows for genuine connection, yet the ambition is world-class. Whether you are stepping up into broader hotel management or looking to refine your fine dining leadership, this role offers continuous learning, professional growth, and a deeply supportive environment.
Key Duties & Responsibilities

- Daily Operational Control: Oversee the smooth flow of shift operations, ensuring seamlessly coordinated service between the kitchen, reception, and dining room.
- Standards & Cleanliness: Maintain an immaculate eye for detail, upholding flawless standards of hygiene, cleanliness, and food safety across all guest-facing areas.
- Support & Leadership: Bring a positive, can-do attitude to shifts, helping train, motivate, and mentor team members to deliver their personal best.
Skills & Experience Required
- Previous Experience (Essential): Strong background within hospitality, luxury hotels, or premium restaurant environments.
- Authentic Hospitality: Exceptional customer service skills with the ability to "read the room," anticipate guest needs, and offer a warm, sincere welcome.
- Passion for Fine Food & Wine: A genuine enthusiasm for gastronomy, seasonal sourcing, and fine dining service.
- Can-Do Attitude: A positive, flexible approach with good timekeeping and a sharp eye for detail.
- Local Practicality: Own transport and a valid driving license are strongly advised due to our scenic country location. Welsh speaking is desirable, but not essential.

We believe that what makes you unique makes us exceptional. Here is what we offer in return for your dedication:
