HEAD BREWER
Brass Castle Brewery are looking for an experienced, passionate and dynamic person to join our team as Head Brewer.
From the centre of the quirky but beautiful market town of Malton in North Yorkshire, our gluten-free and veg*n beers have been finding fans since 2011. We have made recent investments into modern semi-automated brewing equipment and we are now looking for an experienced brewer to lead our brewing operations.
As Head Brewer, you will take overall responsibility for our brewing operation - ensuring our beers are produced safely, consistently and efficiently, while maintaining the quality and character of the Brass Castle range. You will also play a key role in developing new beers, developing staff and improving our processes.
This is a hands-on role within a small, independent brewery; so we are looking for someone who is equally comfortable developing recipes, managing production and completing quality assurance paperwork, as they are getting stuck-in on the brewery floor.
As our Head Brewer your responsibilities would include:
· Taking overall responsibility for brewing, fermentation, maturation and cellar oversight.
· Owning beer quality from raw materials through to packaging - maintaining consistency and specification.
· Monitoring raw materials, stock levels, supplier relationships and brewing costs.
· Developing new recipes and working with the Senior Leadership Team on new beers, styles, collaborations and projects.
· Working closely with Operations and Sales to ensure production meets the needs of the wider business.
· Managing and developing the brewing team to create a culture of high standards and continuous improvement.
· Monitoring production performance, including yield and efficiency, and identifying opportunities for improvement.
· Investigating quality issues and implementing corrective actions.
· Maintaining accurate production, quality and batch records and ensuring the brewery meets HACCP, SALSA, food safety and health & safety requirements.
· Monitoring brewery equipment, identifying maintenance requirements and supporting improvements and investment.
The following skills and experience are essential to the role:
· Significant commercial brewing experience including experience in a senior brewing role.
· Strong technical brewing knowledge and proven recipe development skills, with experience of producing consistent, high-quality, beer at commercial scale.
· Practical experience of HACCP, SALSA and brewery compliance, including accurate production and compliance documentation.
· Experience managing, developing or leading a brewing team.
· Excellent organisational skills, attention to detail and a commitment to quality.
· A practical, hands-on approach to problem solving.
· Commercial awareness and an understanding of production efficiency and cost control.
· The ability to use production information and data to identify problems and drive improvements.
· The ability to work independently, take ownership and make decisions.
· The right to work in the UK.
Desirable Skills
· Formal brewing qualifications, such as an IBD qualification or Brewing Science degree.
· Experience with a broad range of beer styles, including cask, keg and small-pack production.
· Experience with gluten-free and alcohol-free beer production.
· Experience using brewery management or production software.
· Experience supporting brewery equipment projects or commissioning new equipment.
· Knowledge of sustainability, waste reduction and efficient use of utilities.
The Person
We are looking for someone who is passionate about great beer but also understands that running a successful brewery is about much more than brewing great beer. Brass Castle prides itself on its team ethos and we are looking to welcome a team-player into the fold.
You will be organised, commercially-aware and able to balance quality with efficiency and the practical realities of a small independent brewery. You will take pride in your work, lead by example and be willing to get stuck in. Importantly, you will have the knowledge, experience and enthusiasm to take ownership of the brewing operation and help Brass Castle continue to develop and grow.
Salary and Working Arrangements
Salary: £33,000–£38,000 per annum, depending on experience.
Full-time, permanent position, based mainly at our brewhouse in the centre of Malton, North Yorkshire.
This is a hands-on brewery role and will require flexibility around brewing and production schedules.
