Hours: Full-Time, 35–40 hours per week (Wednesday to Sunday)
Shifts: 2:00 AM start times (Includes weekend work)

Salary: £15.38 per hour
Mandatory Requirements
Do not apply unless you meet all of the following criteria:
- Availability: Must be consistently able to commute to Tradeston for 2:00 AM starts and work weekends (Wednesday–Sunday).
- Experience: Minimum of 1 year of experience at Management or Assistant Management level in a commercial bakery.
- Technical Skill: Proven expertise in dough making, specifically Brioche and Laminated doughs, including managing hydration levels.
- Compliance: Strong knowledge of HACCP and EHO requirements, holding at least a Level 2 Food Hygiene certification.
About the Role
Doh is expanding! We are seeking a confident Head Baker to oversee the daily running of our bakery, manage a small, supportive team, and work directly with the owner to scale up production systems.
Key Responsibilities
- Baking & Production: Lead the cutting, rolling, frying, and decoration of doughnuts. Oversee daily prep lists, fillings, toppings, and packing. Help create seasonal menus and weekly specials.
- Administration & Compliance: Oversee staff hiring, training, and development alongside the director. Maintain up-to-date HACCP and EHO paperwork.
- Stock & Margins: Manage stock levels, prepare order sheets, monitor daily orders, and work with the director to adhere to product margins and costings.
