- Recruit, train, mentor, and develop Bartenders, Baristas and Barbacks.
- Create and manage weekly rotas to ensure adequate staffing levels during peak trading periods, weekends, and major events.
- Conduct performance reviews, and ongoing training sessions.
- Conduct weekly and monthly stock counts, identifying and investigating variances.
- Manage inventory levels and oversee cellar management.
- Order drinks, bar supplies, and consumables while maintaining cost controls.
- Build and maintain strong relationships with suppliers.
- Drive wet sales and maximise revenue opportunities across all venues.
- Monitor and manage Gross Profit (GP) margins.
- Implement strategies to increase profitability and operational efficiency.
- Analyse sales performance and produce operational reports for senior management.
- Handle customer feedback and resolve issues professionally and efficiently.
- Ensure venues maintain a welcoming and vibrant atmosphere.
Essential Requirements
- Minimum 2 years’ experience in a Bar Manager or Senior Hospitality Management role.
- Experience managing high-volume bars, late-night venues, or event-led hospitality businesses.
- Strong leadership, organisational, and communication skills.
- Proven experience with staff management, rota planning, stock control, and supplier management.
- Sound understanding of GP management, budgeting, and financial reporting.
- Excellent knowledge of UK licensing laws and health & safety regulations.
- Ability to work flexible hours, including evenings, weekends, and public holidays.
