The George Payne is a much-loved community pub in the heart of Hove. We’ve been serving great food and proper hospitality since 2012, and now we’re looking for a Head Chef who wants to be part of something local and creative. We’re looking for a Head Chef who:
- Enjoys creating daily specials and evolving seasonal menus
- Takes pride in British classics done properly
- Leads from the front and builds a strong kitchen culture
You’ll have creative freedom to shape dishes, respond to the seasons and bring fresh ideas to the table, while delivering consistent quality across our core menu including Sunday roasts.

Requirements:
- Proven experience as a Head Chef in a community-led gastropub or similar independent venue
- Strong track record of maintaining high kitchen compliance standards (EHO readiness, HACCP, food safety systems, stock control and allergen management)
- Confident leading a small team, setting standards, developing junior chefs and holding people accountable
- Genuine passion for food, with the ability to design seasonal menu changes and creative daily specials that drive repeat custom
- Commercial awareness, able to manage GP, ordering and wastage without compromising quality
- Calm, organised and decisive in a busy service environment
- Clear communicator who works well with front of house and ownership
- Right to work in the UK.
