Head Chef / Senior Indian Chef – Exeter

Our restaurant group is seeking a talented and experienced Indian Chef to lead the kitchen at our 45-cover restaurant in Exeter. The Role
You will be responsible for the seamless operation of the kitchen, ensuring every dish that leaves the pass reflects our commitment to excellence.
Key Responsibilities:
Kitchen Leadership: Oversee daily kitchen operations, ensuring a smooth service for a 45-cover venue.
Menu Development: Prepare and present a diverse range of authentic Indian dishes; curate seasonal specials to keep the menu exciting.
Team Management: Train, mentor, and motivate our kitchen team to maintain high culinary standards.
Compliance: Maintain rigorous standards of food hygiene and health and safety (HACCP) at all times.
Stock & Cost Control: Manage inventory, oversee supplier orders, and implement effective systems to minimise waste and maintain healthy margins.
Consistency: Uphold strict quality control regarding presentation, portioning, and flavour consistency.
The Ideal Candidate
We are looking for someone with a deep understanding of regional Indian cuisine and the ability to handle a fast-paced environment with composure.
Requirements:
Proven experience as a Chef specialising in Indian cuisine within a professional, high-volume kitchen.
Deep knowledge of traditional Indian cooking techniques, spice blends, and regional specialities.
Strong leadership skills with the ability to inspire and manage a team.
A sound understanding of UK food safety regulations and HACCP procedures.
Excellent organisational skills and the ability to work effectively under pressure.
Flexibility: Must be willing to work evenings, weekends, and public holidays as required by the business.

Competitive Salary: £31,000 – £35,000 per annum (dependent on experience).
