Job Description
Merchant City Pub Co. is hiring a Retail Business Manager to lead multi-site operations across our Glasgow venue portfolio. This is a full-time, permanent role paying £48,000+ per year, based in Glasgow city centre, overseeing a group of high-volume bars and restaurants.
We run some of Glasgow's best-loved pubs, bars and restaurants, proper venues with real character, built on great food, great drink and genuinely warm hospitality. From a characterful gastro-pub with live music, to a reimagined traditional pub serving elevated comfort food, to a vibrant pizza joint with a soundtrack to match, every venue has its own personality, but all are run to the same high operational standard.
We're looking for an experienced Area Manager, Operations Manager or Multi-Site General Manager ready to take ownership of a portfolio of venues, drive consistent performance across sites, and develop the management teams running them day to day.
Retail Business Manager Responsibilities
- Lead multi-site operations across a portfolio of high-volume bars and restaurants, ensuring consistent standards and performance across every venue
- Recruit, coach and develop General Managers and site management teams, building clear accountability and progression pathways
- Drive sales growth through structured planning, local marketing activity and strong delivery of guest experience across all sites
- Oversee people planning and rota controls across the portfolio to match trade demand while protecting wage budgets
- Manage stock processes, ordering controls and GP performance across sites, reducing waste and improving consistency
- Implement clear operating procedures and ways of working to improve daily execution across the group
- Ensure strong compliance across food safety, health & safety, COSHH and licensing, keeping every venue audit-ready
- Lead incident prevention and safety routines, including risk controls, reporting and follow-up actions
- Report portfolio performance, budgeting and financial modelling to senior leadership
- Deputise for senior leadership across operational and people decisions as required
Retail Business Manager Requirements
- Proven experience as an Area Manager, Operations Manager or multi-site hospitality leader, ideally across bars, pubs or restaurants
- Strong track record of managing and developing General Managers or site-level management teams
- Confident with budgeting, P&L, GP performance and cost control across multiple sites
- Working knowledge of UK food safety, health & safety, COSHH and licensing regulations
- Excellent stakeholder management and communication skills, comfortable reporting to senior leadership
- Ability to travel between Glasgow venues as part of the role
- Personal Licence holder preferred (support available to obtain one)
